{6} Panpepato

It’s the sixth post in this year’s Twelve Bakes of Christmas, and the kitchen is still standing! I know I’ve still got six more recipes to go, but where would the fun be if I wasn’t surrounded by sugar, spice and all things nice at this time of year? Well, that plus a whole lot of mess, a sugar thermometer and more than a few burns due to my tendency to use tea towels rather than proper oven gloves…

Today’s recipe is a delicious Italian sweet treat called panpepato, which means “peppered bread”. It is associated with the Province of Ferrera on the Adriatic coast. It has more than a passing resemblance to panforte, but panpepato is dark in colour, flavoured with cocoa, chocolate and pepper, and sometimes even coated in yet more chocolate.


This is a cake with a long history, with some sources suggesting it can be traced back to the 11th century. Panforte and panpepato would originally have been consumed by the aristocracy – with sweet candied fruit and spices, these were firmly luxury confectionery. And as with many traditional recipes, there are various origin myths about which came first.

Some suggest it started with panforte, and panpepato was later created during a siege with candied fruit to address the lack of fresh fruit or less choice in terms of ingredients for the panforte. Others suggest panpepato is where it was at originally, and panforte was a later creation with lighter ingredients in honour of Queen Margherita of Savoy’s visit to Siena in 1879. Of course, just where cocoa and chocolate came from in medieval Italy is left unclear! Whichever version is true, they’re both delicious. And finally…those spices? They were thought to have aphrodisiac properties, bringing troubled couples together. Perhaps a slice of panpepato promises not just delicious flavours but a night of romance when it is chilly outside?


I was really pleased with how easy this was to make and how this turned out. Sometimes a recipe can feel like a slog, especially where you have lots of steps to follow, but it was really pleasant to prepare the almonds, hazelnuts and candied peel, and then measure out the various spices.

Beyond the measuring, you don’t need to more than pour all the dry ingredients into a large bowl, make a syrup from honey, butter, sugar and a few pieces of dark chocolate, them mix the lot and bake it. Once it came out of the oven and had cooled down, I dusted it with cocoa and rubbed it with a pastry brush. Some recipes suggested icing sugar, but I thought this would look a little more sophisticated. Other recipes suggested a coating of chocolate, but I think that would have been too rich even for me!


The flavour is reminiscent of British fruit cake, but without all the dried vine fruits – you’ve got nuts and candied citrus, plus spices and a bit of depth from the cocoa and chocolate. There isn’t really a chocolate flavour as such, but I think the cocoa helps provide a balance to the sweetness of the honey and sugar. And of course the cocoa also provides a dramatic contrast to the pale cream colour of the almonds and hazelnuts. Some recipes suggest coarsely chopping the nuts, but I love the pattern of the whole nuts when you slice into the panpepato.


From what I have found, there is no single “correct” recipe that you have to follow. You can play around with the types of nuts you use – just almonds, just hazelnuts, or add some pine nuts or pistachios – and there are various different dried fruits you could use. Some recipes have figs or sultanas, and even more exotic items like candied papaya or melon could be interesting. Finally, you can also try different spices in this recipe, but I do think you need to have that black pepper as a nod to this recipe’s origins.

I’d look at this as a sweet, rather than a cake or a bread. It is absolutely delicious, but it is also incredibly rich, so you might be surprised just how little of it you want to eat in one go. It is also a treat that will last for a while, so a good one to have prepared for surprise guests. I think it is great with tea or coffee, cut into very thin slices and then into nibble-sized morsels.

To make Panpepato (makes 1 slab)

• 150g skinned hazelnuts
• 150g blanched almonds
• 100g candied orange peel
• 100g candied lemon peel
• 50g plain flour
• 30g cocoa powder
• 1 teaspoon ground cinnamon
• 1/2 teaspoon ground black pepper
• 1/2 teaspoon ground nutmeg
• 1/2 teaspoon ground coriander
• 1/4 teaspoon ground cloves
• 100g caster sugar
• 225g orange blossom honey
• 3 tablespoons water

• 50g dark chocolate
• 25g unsalted butter
• Cocoa powder, for dredging

1. Preheat the oven to 180°C. Put the nuts on two separate trays, and toast in the oven for 10-15 minutes until fragrant and just golden. Watch them closely – the hazelnuts will be done before the almonds. When ready, remove from the oven and leave to cool.

2. Rub some greaseproof paper with a little vegetable oil, and use it to line a 20cm square tin. If you prefer, you can also use rice paper but this will stick to the finished panpepato – it’s a question of personal preference.

3. Reduce the oven heat to 150°C.

4. Chop the peel into fairly small chunks. Place in a bowl with the nuts, flour, cocoa powder and ground spices. Mix well.

5. Put the sugar, honey, water, butter and chocolate into a saucepan. Heat gently until the sugar dissolves, and boil until the mixture reaches the “soft ball” stage (or 113°C/235°F on a thermometer).

6. Pour the syrup onto the dry ingredients and mix well. Transfer to the tin. Use a metal spoon or spatula rubbed with a little butter or oil to flatten the mixture.

7. Bake the panpepato for 35-40 minutes. The surface will look “set” when the panpepato is done. Remove from the oven and leave to cool completely. If you have an uneven panpepato, take a piece of greaseproof paper rubbed with a little oil – lay on top of the still-warm panpepato and press to even it out.

8. Remove the panpepato from the tin, peel off the greaseproof paper and trim off the edges (they will be a bit hard). If using rice paper, leave it on the panpepato. Dust the top lightly with cocoa and rub lightly with your fingers or a pastry brush so a bit of the fruit and nut detail shows up.

9. Store in an airtight container. Cut into thin slices to serve.

Drink More Gin!

Last autumn I got into making a few of my own fruit liqueurs. Flavours of the season like quince, damson, sloe and spiced pear. Each of them was delicious and well worth the patience required to let them sit and quietly do their thing down in the cellar. Nothing quite as magical as pouring a little glass, and setting down to watch a festive film on the sofa next to the Christmas tree.

However, my autumnal shenanigans left me playing things fairly safely, as I had stuck to familiar fruity flavours. Of course, I had also made a batch of cinnamon-infused vodka, which packed quite a punch, even when served ice-cold, and this got me thinking about making something that was based on herbs and spices. And this quickly led me to the idea of trying to make my own gin.

Now, before anyone gets the idea that I might set fire to my own house or that they should call the police, I’m not actually planning to start running a home distillery under the stairs! No, the recommended approach for those of a gin-like persuasion and sufficiently bonkers to have a go at this at home is to take some decent-ish vodka, and then add various botanicals to allow their flavour to infuse into the alcohol. Given that most of the ingredients you use are fairly strong flavours, the whole thing is done in about three days. What you will get at the end is something that doesn’t look like the clear gin that you are probably used to, but it certainly has the flavours and aromas you might expect. The difference is due to the way commercial gins are produced, allowing the spirit to distil through the botanticals, taking the flavours as it goes and resulting in a clear spirit. My method will give you  bit more of an amber colour, but that probably means it has traces of vitamins in there too.

Now, if you’re going to make gin, the one non-negotiable ingredient in there is juniper berries. These have a wonderfully fruity and almonst pine-like aroma, very resinous, which when you smell them has that specific gin-like aroma. If I were being very ambitious, I would be harvesting these myself, as they grow wild in Scotland. Well, maybe next time, but I had to make do with dried berries from Wholefoods. The bushes tend not to grow wild in the streets of London. Do not be misled by the name London Gin!

Beyond the juniper, you’ve pretty much got complete freedom about what you want to add, and it is at this point that you might just want to raid your spice drawer or cabinet to see what you can get your hands on. The key thing to think about is what are the two or three key notes that you want to come out in terms of flavour, and then major on those, with other ingredients acting more as background flavours, to be hinted at rather than standing centre stage.

As supporting stars, I oped for cardamom, which is just about my favourite spice, with a fresh lemon-like aroma that I thought would enhance the juniper. In addition to that, I added some orange peel (rather than the more obvious lemon or lime) and a blade of star anise. This last spice in particular is very, very powerful. It adds an exotic sweet spicy note, but it really is easy to get this wrong. I added this on day two, and by day three (the last day of infusing) it was already quite noticeable.

After that, free rein beckons. I also added a teaspoon of coriander seeds to add a little more citrus. I also did just as I suggest you do, raiding the spice drawer to add a pinch of the more aromatic items in there – red peppercorns, nigella seeds and caraway.

I also drew some inspiration from a Spanish gin that I enjoyed in Barcelona last year, which was infused with rosemary. That seemed like a good idea to try here. I also went for some thyme and lavender leaves. It was just like picking tea, I plucked only the fresh new leaves from the tips of each plant. Each of these could, on its own, be very powerful, and I did not want much more than a hint of their respective flavours.

Now, I mentioned already that I added a blade of star anise on day two. I also added a small piece of cinnamon at the same time. Both of these are sweet, woody spices, and I thought they would help to balance the fresher flavours that I already had in the gin. I make all of this sound like science, but of course, it really was all just guesswork.

It is important to take all this merely as inspiration, and not to feel limited by what I’ve suggested. I enjoy Hendriks, a Scottish gin flavoured with cucumber and rose petals, as well as a recent discovery called Ophir, which strong notes of cardamom and black peppercorn (note to readers – talk to bartenders, they will introduce you to new things!). Whatever herbs and spices you enjoy, chances are someone makes a gin with it.

What is important is to think about what you’ve got to hand as well as what is in season. I’ve also got a blackcurrant sage bush in the garden, which could be interesting for next time? If I get back to this in summer, I can always add a few rose petals, a few violets, and perhaps a little lemon thyme…balanced with pepper, caraway and aniseed?

Whatever combination of botanicals you use, there is one way to get a rough idea of the aroma you can expect. Put everything into a bowl, then crush lightly. This should release some of the essential oils, and you’ll get a very vague sense of what you can expect. If something is dominating, then remove it, or add more of what you feel you are missing.

Making home-made gin is a dooddle. I put everything (other than the cinnamon and star anise) into a bottle of vodka. After one day, that familiar aroma of gin was there, and the vodka has taken on a light amber hue. On day four (72 hours steeping) I strained the mixture, poured a shot into a glass with ice and a slice of cucumber, and topped it up with tonic to make what I hoped would taste not unlike a G&T. So how was it?

Well…really quite fantastic. The flavours are much more pronounced than in distilled gins, and I could pick out the various flavours that I used, but the whole was definitely greater than the sum of its parts. The best way to describe this is as something that is very different from the gin that you are used to, not a replacement, but nice as an addition to the drinks cabinet. It is not as crisp, but you get more of the individual flavour components while drinking. I found that my particular gin was only so-so with lemon, nice with orange zest, but it really came to life with a slice of cucumber. Perhaps it was the fact that there was quite a lot of juniper and warm spice in there that meant it was complemented by the cool freshness of cucumber. All in all – I think I’ve had a success with this one!

To infuse your own gin (makes 750ml):

• 750ml good basic vodka
• 3 tablespoons juniper berries
• 1 teaspoon cardamom pods
• 1 teaspoon coriander seeds
• 1 sprig lavender leaves (tips only)
• 4 sprigs fresh rosemary (tips only)
• 4 sprigs fresh thyme (tips only)
• pinch red peppercorns
• pinch caraway seeds
• pinch nigella seeds
• 2 strips orange peel, shredded
• 1 blade star anise
• 1/2cm piece cinnamon

1. Lightly crush the seeds and bruise the leaves. Put everything in the vodka bottle, apart from the cinnamon and star anise. Leave to infuse in a dark place for two days, shaking from time to time.

2. Add the star anise and cinnamon. Shake well, and leave in a dark place for another 24 hours, shaking from time to time.

3. Once the mixture is ready, strain to remove the seeds and herbs. If you prefer, pass through a filter.

4. Enjoy on ice with tonic and a slice of cucumber.

Worth making? Yes! This is super-easy and the flavours are really fantastic.

{11} Pepparkakor

Many years ago, when I arrived in Stockholm to study there for a year, I discovered pepperkakor, Swedish spicy gingerbread biscuits. Admittedly, I arrived there in August, and it was not really until December that we got into the Christmas mood, but you get my drift.

Unlike the slabs of soft, squidgy gingerbread we know in Britain, these are rolled out thinly, cut into just about any shape you can imagine, and then baked until crisp. They can be finished with royal icing and jazzed up with silver balls, drizzled with melted chocolate, or left au naturel. Or served in the shape of an elk. To each his own…

I love pepparkakor for the very simple reason that they are among the least fussy of Christmas biscuits. They don’t need masses of decoration, and given they are rarely drowning in icing, jam or chocolate, you can happily nibble on them on an almost constant basis. Their spiciness also goes well with tea, coffee or the ubiquitous mulled wine.

As you can see, I’ve got a little crazy when it comes to cutting out shapes. Sure, I’ve got loads of the traditional stars, hearts, and circles, but I’ve also got a whole gingerbread forest going on here – trees, elks, foxes and squirrels. The elk, in particular, looks nothing short of amazing.

While the woodland fantasy was purchased in Ikea (where else?), for the hearts and stars, it was an altogether classier affair. I received two copper cutters from my friend Anne, which not only cut the dough easily, but they look really lovely. They’ve already acquired a prime spot in the kitchen on the knick-knack shelf. These things are too pretty to hide away in a drawer.

For the recipe, I’ve used the version from Signe Johansen’s excellent Scandilicious Baking, albeit with a few tweaks. The main changes I have made is to play around a little with the spices. While Signe added a dash of black pepper as a nod to the origin of the name of these treats, I quite like the heat from pepper, adding half a teaspoon of black pepper. I don’t find this to be too much – it is actually very rich, warming and aromatic – but if you’re a little less keep, feed free to go easy on the pepper. I’ve also thrown in some coriander and allspice, and toned down the cinnamon. I like cinnamon, but I do like to get the flavours of the other spices I am using. I’ve also added the zest of a clementine for an added dash of festive goodness. The flavour is not overpowering, rather it serves to complement the spice.

I’ve also used dark brown sugar to provide the colour for these biscuits, and in place of Signe’s almost equal weights of treacle and golden syrup, I’ve used just two tablespoons of treacle here. I’m just not mad keen on treacle, but if you’re a treacle (or molasses) fiend, then by all means, knock yourself out.

Now, while I’ve banged on about how amazing pepparkakor are just as they are, they also serve as the perfect foil to go totally nuts in the decoration department. Whip up some royal icing and get going – silver balls look particularly good, and if you want to do something a little different, try studding them with a few red peppercorns. Not only do these look really pretty and festive, but when you bit into them, you get the warm, rich hit of spice. If you want to use them the way I’ve used the silver balls here, then feel free, but do taste one before serving to your guests. They’ll thank you for that, believe me!

When it comes to actually making these biscuits, I’ve got a few practical tips. First, it really is important to keep the dough chilled. It makes it much easier to roll out and cut (the colder dough comes out of the cutters). Second, if you want to cut out very fussy shapes, you’re best to roll the dough onto a sheet of greaseproof paper, then cut out the shapes and remove the excess. I tried cutting the elks on the worktop, and they all fell apart as I tried to move them onto the tray. Finally, it is worth putting the tray with the cut dough into the fridge for a few minutes before baking – this will help to keep the edges of the shapes in place. If you’ve gone to all the effort of cutting out pepparkakor to look like elks, you want them to look like elks!

It’s worth knowing that this recipe does make masses of cookies. You can either make half the amount, or bake it in batches as you need to whip up new batches (or if you’re going to leave it a while between bakes, freeze the dough in batches). If you make these cookies and find that they get a bit soft after a few days, just pop into a low oven and allow to dry out for a few minutes. They will come out soft, but will crisp up when cool, getting back their ginger snappiness in no time.

To make pepparkakor, adapted from Scandilicious Baking (make 50-80, depending on size):

• 75g light brown sugar
• 75g dark brown sugar
• 150g butter
• 1 clementine, zest only
• 50ml milk
• 120ml golden syrup (add 2 tablespoons of treacle if you want)
• 2 egg yolks
• 2 teaspoons ground cinnamon
• 1 teaspoon ground ginger
• 1/4 teaspoon ground cardamom
• 1/2 teaspoon ground cloves
• 1/2 teaspoon ground black pepper
• 1/2 teaspoon ground allspice
• 1/2 teaspoon ground nutmeg
• 1/2 teaspoon ground coriander
• 1 teaspoon bicarbonate of soda
• 450g plain flour

1. Put the two types of brown sugar and the butter into a bowl. Beat until light and fluffy. Add the clementine zest, milk, syrup, egg yolks and spices and beat well for another minute.

2. Add the flour and bicarbonate of soda and mix to a soft dough. Wrap in cling film and chill in the fridge overnight.

3. Preheat the oven to 150°C (300°F). Line a baking tray with greaseproof paper.

4. Take pieces of the chilled dough. Roll out very thinly on a well-floured worktop and cut out whatever shapes your heart desires.

5. Bake the cookies for around 10 minutes until browned but not too dark. They might need more or less time, depending on their size. When done, remove from the oven, the leave to sit for a moment then transfer to a wire tray to cool completely.

Worth making? These biscuits are highly recommended – very spicy, very crisp and very, very more-ish.

Sweet Potato Wedges

Autumn is now with us. The mornings might be bright, but there is that unmistakable crispness in the air that signals things are about to get a lot “fresher” in the coming weeks, and the evenings are getting dark very quickly. Sure, it might still feel warm if you’re in a sunny spot, but when you’re in the shade, or a breeze blows past, you feel just how nippy things are getting.

With the chaos of moving house almost at an end, I’ve finally been back in the kitchen. All of a sudden, my cooking has moved away from the salads of summer, and quick, light suppers, and into much more substantial fare. Lentil dishes with lots of spices, curries, baked squash, soups, fritters…it’s the time of year to batten down the hatches and do all you can to fend off the cold weather that is approaching. It’s not a conscious change on my part, but there are certain dishes the you just have a craving for as the seasons roll by. I have, however, resisted the urge to buy Christmas pudding, even if my local shop has decided that this is exactly what we want to eat in October.

In much of my cooking at this time of year, I use a lot of spices, and I take a heavy-handed approach. I somehow feel that lots of cumin, pepper, ginger, garlic and sambal will help to fight off the sniffles during the colder months. It might work, it might not, but it certainly makes things a lot more tasty. It’s also worth getting a little more creating in how you season things – one of my current favourites is ground allspice, which is very common in sweet treats like biscuits and gingerbread, but it adds an interesting dimension to savoury dishes too.

It was with all this in mind that I got round to trying something that was on my “to make” list for quite some time. I love sweet potatoes baked and topped with feta, so I expected great things when they were spiced and baked as wedges.

Pleasingly, these are very, very simple to make – nothing much more than peeled sweet potato, cut to size, then tossed in oil with some spices, and then baked. They also have the benefit of looking very impressive – a jolly autumnal bust of orange when freshly cut, turning a deeper colour after baking. They can also be prepared hours ahead of time and left in the spice mixture to marinade (if it is possible to marinade potatoes?), and make a great snack or side dish. However it is the spices that take these from so-so to wow-wow. The spices you use are completely up to you – I went with some personal favourites (allspice, paprika, curry powder, black pepper and cumin). A tasty little dish as the long nights draw in.

As you can see below, these wedges hold their shape rather nicely too after being baked in a hot oven.

To make sweet potato wedges:

• 2 large sweet potatoes
• 3 tablespoons olive oil
• spices – select 5, and use 1/2 teaspoon of each(*)

1. Preheat the oven to 220°C (420°F).

2. Peel the potatoes. Cut lengthways into eight wedges, then slice each wedge diagonally (so each potato provides 16 pieces).

3. In a large bowl, combine the olive oil and spices. Mix well, then add the potato wedges.

4. Transfer the coated wedges to a tray lined with greaseproof paper and bake for 30-40 minutes until you can insert a knife easily, and the wedges are just stating to brown at the edges.

5. Serve immediately with the dip of your choice.(**)

(*) For the spices, I used allspice, paprika, curry powder, black pepper and cumin. And then I cheated and added some dried thyme too.

(**) I served these with a sprinkle of salt, and a dip made from tahini, yoghurt, sambal and lime juice.

Black Bean Stew

First of all, I would like to wish everyone a Happy New Year!

Now that all the festive fun is over, it is time to make up for all that indulgence. This year, I think I was actually rather restrained, but upping the intake of healthy stuff in the middle of winter is never a bad thing. So this year, my resolution is to cook with less salt, less butter and more pulses and legumes. This is for January initially, but we’ll see how things go. You’d think I would have learned to be careful about basing lots of posts around a theme after all the Christmas baking, but I’m just a glutton for punishment!

Now, let’s be honest – salt and butter are fantastic. They are delicious, work wonders in food, and sometimes there is no substitute. however, it is easy to get lazy and just add more of each in a dish under the guise of “adding flavour”, and before you know it, you’re using too much. So this is less about eliminating the, and more about cutting them down for a while and trying other things to boost the taste of a dish – slow cooking, adding spices, a twist of lemon juice, chargrilling…and if nothing else, it will get me trying a few new things in the kitchen. Remember – it’s about cutting down, but cutting out, so when I do slip a bit of butter on a slice of bread, I’ll appreciate it all the more.

The “beans and legumes” element is about using ingredients that it can be all too easy to overlook in the kitchen, particular those that need to be soaked overnight. I am a huge fan of pasta, and when you get home a little late in the day, pasta will always win out over beans that need soaking overnight. So…my hope is that by using them more, I will change that and become better acquainted with…eh…the magical world of beans!

So here is my first dish, which I think is simplicity itself – an easy stew of black turtle beans and tomatoes. You throw everything in one pot and in less than an hour, it’s done. There is also no added salt in the stew itself. Instead, I’ve made liberal use of aromatic spices and added a dash of paprika for some warmth. The tomatoes all add some tanginess too. Basta!

To make black bean stew (serves 4):

• 200g black turtle beans
• 2 tins chopped tomatoes
• 1 teaspoon ground cumin
• 1 teaspoon ground turmeric
• 1 teaspoon ground coriander
• 1/2 teaspoon ground black pepper
• 1/2 teaspoon ground paprika
• 1/2 teaspoon fennel seeds, toasted and crushed
• 1/2 teaspoon nigella (black onion) seeds, toasted and crushed
• grated cheddar, to serve

Soak the beans overnight.

The next day, drain, rinse well, then put back in the pan. Cover with cold water, bring to the boil, then simmer for 30 minutes.

Next, add all the spices and chopped tomatoes. Stir well and keep simmering – uncovered – for another 30 minutes until the stew is thick and the beans are soft. If the stew gets too dry too quickly, add more water – the beans need a total cooking time of 60 minutes.

Serve with a spoon of low-fat natural yoghurt and a small sprinkling of grated mature cheddar.

Worth making? I love this as a main dish – it’s very easy to prepare and has lots of flavour. It defiantly comes under the “easy winter suppers” category and is a good recipe for the repertoire.

Scottish food: Clapshot (Potato & Swede Mash)

To contrast with the very, very sweet tablet I posted a few days ago, clapshot is the polar opposite. Very simple and very savoury. Looking at the list of ingredients, I concede that it does not sound so very exciting, but I can assure you that it all works together beautifully.

Clapshot originates in the north of Scotland, with Orkney usually suggested as its birthplace. This would probably have been the main part of the meal back when life was a lot less comfortable than it is today, but for modern tastes, this makes a fine side dish too.

Now, as if just to prove the point of how different the Scots are, when we talk about “turnip” we mean the orange root vegetable others refer to as swede. If you use white turnips…well, I have never made this with white turnips, but I would imagine that it does not become as soft as swede, so it will be altogether more lumpy, so the dish won’t look as good. By all means try it, but you have been forewarned! In contrast, swede becomes wonderfully juicy and tender when boiled, and changes from a dull peachy hue to a vibrant orange colour, which looks rather fetching against yellow potatoes and flecked with green chives and black pepper. The taste is interesting, and incredibly more-ish: the sweetness and aroma of the swede comes out and mixes with the sharpness of the pepper and chives, tempered by the creaminess of the butter. All this from potato and turnip!

Simple? Yes. But something to tickle the tastebuds? Most certainly.

To make clapshot (as a side for four or main course for two):

• Approximately 500g swede, peeled and roughly cubed
Approximately 500g potatoes, peeled and roughly cubed
• 50g butter
• salt, to taste
• freshly ground black pepper, to taste
• 2-3 tablespoons milk
• 2 tablespoons chopped fresh chives

Bring a large pan of water to the boil. Add the turnip and potato, and cook until the vegetables are tender. Drain, and return immediately to the pot.

Add the butter, chives,  salt, pepper and milk, and use a masher to roughly combine the turnip and potato. Make the mixture as rough or smooth as you like (I like to leave it a little lumpy). Serve straight away while still hot.

If you want to prepare ahead of time, omit the chives when mashing the clapshot. Reheat in an ovenproof dish covered with tin foil, and mix the chives into the clapshot when it comes out of the oven.

If you are feeling creative or want to mix it up a little, you could add a pinch of nutmeg, or use the butter to fry a little chopped onion to add to the mash.

Worth making? Given how simple this sounds, and how quick it is to make, clapshot is very tasty, and a nice way to vary the selection of winter vegetables.
