{12} Vasilopita Cake

Happy New Year! We’ve made it out of 2020, and we’ve also reached the last instalment of our 12 Festive Bakes for the year. Or more accurately last year.

I normally try to finish everything before Christmas Day so that all the goodies are on offer over the festive holiday, ready to hand to all those guests who will be popping in. Except that imperative was not there this year, and we’re working our way through the various baked goods. Another thing that is different this year is that I’ve run a little later, and as the final bake was due to coincide with New Year, I decided to make something that celebrates this time of year. Well, I found out that in Greece it is traditional to eat a vasilopita. So I made one.

The name vasilopita means “St Basil’s pie”. It can be no coincidence that the Feast of St Basil is on 1 January, and he happens to be the patron saint of wishes and blessings. Very fitting for the time of renewal, new hopes and good intentions. The vasilopita can come in one of two forms. It can either be an enriched yeasted bread, or a cake. As I was making this late on New Year’s Eve, I decided to go the cake version as I thought it would be quicker to make. Truth be told, on that day I had already spent many, many hours outside in the park, and all that fresh air and very cold temperatures left me ready for bed quite early. Those New Year’s Eve celebrations where we partied until the wee hours seem but a distant memory these days…


There is also a lovely ritual that goes with these cakes. A coin is hidden in the bread or included in the cake when it is baked. When the vasilopita is served, it is cut into pieces and offered to guests in turn, from the oldest to the youngest. The one that gets the coin will enjoy good luck in the year to come. This is presumably on the basis that they’ve already enjoyed some good luck by neither ingesting the coin nor breaking a tooth on it? Anyway, I think this is a fun thing to do, but make sure you have a clean coin, wash it thoroughly in hot, soapy water, and wrap it tightly in tin foil. Safety first.

Vasilopita cakes are usually smooth, and decorated with a dusting of icing sugar. Often the year will be written in numebrs on top, either using a stencil, in icing, or perhaps using nuts. However, I decided that I would just dust with icing, as this was a good chance to use my intricate Dutch cake mould, which is shaped like a Zeeuwse Knoop. This is traditional symbol from the Zeeland region. It has twelve points on it rather like a clock, and that felt like enough of a link to New Year’s Eve to justify using it.


The traditional flavour in a vasilopita cake is orange zest, which I’ve used here. Note that I was quite heavy-handed and used the zest of two whole oranges, plus a bit of lemon zest. I loved the result, but I love citrus and this cake did pack a punch. If you want a more delicate flavour, use just one orange.

I also saw a couple of recipes that suggested using mahleb (the ground pits of the St Lucie cherry, which has a bitter-almond flavour) and ground mastic resin which is popular in Greek sweets and baking. The flavour and aroma of mastic are hard to describe, but I think it’s reminiscent of something light, fresh and resinous, with a touch of pine about it. So I added both of those since I happened to have them in the spice drawer. Neither dominates, but they add to the overall result – an aromatic, zesty cake.

After all those rich spices and chocolate over the last couple of weeks, this made a very pleasant change. We enjoyed it with breakfast on New Year’s Day, then set about taking down the decorations. We always do this on New Year’s Day, and it feels right. The festive period is drawing to a close, the house returns to a calmer state, and we get to marvel at how spacious and airy our home suddenly feels. Yes, in lockdown times it feels a little sad to be putting away all the sparkle and wrap all the tree ornaments in their protective paper, but I’m hopeful that we will be unwrapping them again in December 2021 surrounded by our nearest and dearest.

I mentioned that the vasilopita can be both a bread and cake. I think I’ll also have a go at the bread version. I’ve seen a couple of recipes, and it seems similar to an Italian panettone, but without the dried fruit and the inclusion of orange zest and mastic. If it’s good, perhaps it will make the 2021 edition of the Twelve Bakes of Christmas?

To make a Vasilopita Cake:

For the cake

• 150g butter
• 250g white caster sugar
• zest of 1 or 2 oranges
• zest of 1/2 lemon
• 1 teaspoon mahleb (optional)
• 1/2 teaspoon ground mastic resin (optional)
• 1/2 teaspoon vanilla extract
• 3 large eggs
• 225g self-raising flour
• 1/2 teaspoon baking powder

• 50ml whole milk
• 75ml yoghurt
• 2 tablespoons orange juice
• 25g ground almonds
• 25g flaked almonds, roughly crushed

For the glaze

• 100g icing sugar
• 2 tablespoons orange juice

To finish

• icing sugar, to dust

1. Prepare a 20cm (8 inch) diameter cake pan. Either line one with greaseproof paper, or if using a fancy mould, grease it generously with butter, then dust it with plain flour.

2. Put the butter in a large bowl, and beat until fluffy. Add the sugar and beat until smooth, then add the flavourings (orange zest, lemon zest, mahleb, mastica and vanilla extract). Mix well.

3. Add the eggs, one at a time, and beat until smooth. Add a spoonful of flour with each egg to prevent the mixture from splitting.

4. Mix the remaining flour and the baking powder in a separate bowl. Combine the milk and the yoghurt in another bowl. Add one-third of the remaining flour, and mix; then half the milk mixture; then next third of the flour; the rest of the milk mixture; then the last of the flour. Finally fold in the orange juice, ground almonds and flaked almonds

5. Transfer the mixture to the prepared baking tin. If you’re using a fancy mould, spoon it gently so that you do not disturb the flour layer lining the mould.

6. Bake the cake for 1-1 1/2 hours until an inserted skewer comes out clean. Cover with tin foil after 45 minutes to prevent the cake from getting too dark. Remove from the oven and allow to cool completely.

7. Make the glaze. Mix the icing sugar and orange juice until smooth, then cover the top and sides of the cake. Leave to dry.

8. Just before serving, dust the cake with icing sugar.

{8} Queen’s Cinnamon Stars

Today’s festive delight is a right royal treat, quite literally.

I came across a recipe for Cinnamon Stars from the royal kitchens of Buckingham Palace (original here, including a video of how they do it). So, of course, I just had to have a go at making them.


These may be familiar to you as German Zimtsterne, or cinnamon stars. You start off making a dough with ground nuts and cinnamon, then finish them with a meringue topping. I’ve made cinnamon stars before, but they were a bit more basic.

The Queen’s version includes candied orange peel, a lot of cinnamon, and a dash of cloves. They are also topped with snow-white icing and feature a bit of elaborate piping. Very fancy, but you’d expect that if you’re ever popping round for a festive cuppa at the Palace.


When I read the recipe, I was convinced by the idea. However, I had a couple of quibbles with the method. The suggestion was to make a meringue, and use two-thirds of it to make the dough. Then you roll out the dough, cover it with the reserved meringue, and then cut out shapes. I think the idea is that the cookies are then pre-iced? Hmmm. This struck me as quite wasteful, as you would not be able to re-roll the offcuts since the meringue would make it all too sticky. Also I knew that smearing something with meringue was likely to be a messy affair with a child in the house who is enjoying touching everything within reach.

So I adapted the method. I adjusted the amounts of the meringue to start with – I made two-thirds of the amount to go in the dough, and would make the “missing” meringue later for the icing. Then I made and rolled the dough, cut out the shapes without the icing, and then I could happily gather the scraps and keep re-rolling until I was done. We did stars and moons (using a circular cutter and overlapping the cuts to get the right shape). Diamond shapes would also be good – easy with a knife, and I think rather fitting.

Once they were baked, I finished them off with the meringue royal icing suggested by the Palace. This looks like a bit of a pain to make, as you are essentially making thick icing and then thinning it down, and it would be easier just to make thinner royal icing to start with. However, the Palace’s approach results in a very light icing rather than one which cracks when you bite into it. You just need to be very, very patient as you sit down to finely ice all the cookies. Maybe that’s what the Palace’s all-in-one method is seeking to get round?

My split approach also had some extra benefits – the cookies looked very neat and the icing stayed perfectly white. I know that this all sounds terribly fiddly, but once you get into the swing of things, it’s the perfect sort of activity to do with a film or a radio play on in the background. And the final result is a tray of perfect-looking regal cookies.


In the Buckingham Palace version they are finished off with some sort of red jam in the centre and there is lots of intricate icing piped all over them. Piping icing is not one of my skills, and I don’t have the equipment to do it properly. I managed to find a small nozzle to give it a go, but I gave up around half-way. It looks kind of nice, but I don’t think it really adds that much to them overall unless this is something you are really good at. Of course, that might just be my frustration talking!

So all in all, were they worth making? Yes, I think so. They are up a level from my own take on cinnamon stars from a few years ago. The different technique to make the dough gives a far neater result, and I like the addition of the citrus peel and the hint of cloves. I would definitely make these again, but I’d perhaps use 50/50 ground hazelnuts and ground almonds. Then, my friends, I truly would have the ultimate cinnamon stars. I just won’t be piping decorations on top.

To make Queen’s Cinnamon Stars (my adapted, less wasteful approach)

For the dough

• 115g candied orange and lemon peel
• 240g icing sugar

• 55g egg whites (2 medium egg whites)
• 1 tablespoon lemon juice
• 300g ground almonds
• zest of 1/2 lemon or orange
• 5 teaspoons ground cinnamon
• 1/4 teaspoon ground cloves

For the icing

• 1 medium egg white (30g)
• 225g icing sugar
• 1 teaspoon lemon juice
• water

1. Put the candied peel into a food processor. Blitz to a paste – you will need to scrape down the sides a few times to get it perfectly smooth.

2. In a very clean bowl, whisk the egg whites to soft peaks. Add half the icing sugar and whisk until it is well-combined. Add the lemon juice and the rest of the icing sugar. It will start off quite soft and wet, but keep beating until you have a soft meringue (more like the texture of floppy whipped cream). It might seem a bit wet at the start, but keep going and it will happen.

3. Add the candied peel paste and the rest of the ingredients to the meringue bowl. Mix well until it forms a dough. Don’t worry about being delicate with the dough, and towards the end you will have to use your hands. If it seems a bit sticky, add a few tablespoons of ground almonds. Wrap the dough in cling film and chill for an hour, or overnight.

4. Time to bake and shape. Preheat the oven to 160°C (320°F). Line a baking sheet with greaseproof paper.

5. Place the dough on a separate piece of greaseproof paper. Roll it out to 1cm thickness. Cut out shapes (stars, moons, diamonds…) and transfer to the baking sheet. Your cutters will get sticky, so keep a clean damp cloth to hand to wipe the edges often.

6. Bake the cookies for around 12 minutes, turning half-way to get an even bake. They will puff up slightly and darken a little on the edges. Remove from the oven and allow to cool on the tray for a couple of minutes. Transfer to a wire rack to cool completely. They might seem quite hard at this stage, but they will soften.

7. Time to ice the cookies. Put the egg white into a bowl and whisk to soft peaks. Add the icing sugar and lemon juice, and beat well for several minutes until the mixture is thick and smooth – like the appetising texture of toothpaste. Now thin it down with water, a few drops at a time, until it is a flowing consistency. You want to be able to leave a trail on a plate that stays in place and does not run and spread. Put the icing into a piping bag with a small nozzle, and with a lot of patience, use to cover the tops of the cookies. Use a clean cocktail stick to manipulate the icing to cover any gaps. Leave in a dry place, away from children and pets, for the icing to dry.

Note: I found it easiest to ice the cookies one at a time – pipe on the icing to cover most of the top, then go in with the cocktail stick to tease the icing to cover any bald patches and burst any air bubbles. If you ice a few, then go in to clean up, the icing will be starting to set when you go back.

{3} Paciencias

Each year that I’ve done my Twelve Bakes of Christmas, I’ve tried to go far and wide in search of inspiration. But each year I come back to the realisation that my selection has ended up being pretty Europe-centric. I’ve included a couple of recipes from America (snickerdoodles and bizcohitos) plus South African soetkoekies, but I’m still on the hunt for other ideas. Well, today – and in the spirit of the famous line from Ghostbusters – we’ve got one!


These are little meringue cookies from the Philippines. They are called paciencias, which derives from the word for patience.

I didn’t find an authoritative single reason as to why they have this name, but I can only surmise that since they are made from whisked egg whites, they would entail quite a lot of patience (as well as a demanding elbow workout) to get them whisked up to make the meringue base in the days before electric mixers. Or perhaps it comes from hungry little hands trying to reach for these cookies, only for parents to have to shoo them away as they try to instil some patience into their little darlings?


The recipe is pretty simple and quick to make – you make a meringue, add a little flour and baking powder for structure and lift, plus some flavouring. Most recipes suggest vanilla, but some also use almond extract. I happen to love all things almond, and I think the combination of vanilla and almond is really delicious, so I decided that I’d do the double.

Then I had a look on the ever-reliable Wikipedia which has a very brief article on paciencias which suggests they are flavoured with “calamansi”. I’ve never heard of this, but it is a citrus fruit grown in the Philippines that is thought to be a kumquat-mandarin cross. So if you wanted to add a little more oomph to the flavour profile, you could add some grated mandarin zest, which also has the added benefit of being a nice little festive touch. I lived on the edge and added a dash of orange zest, and I reckon they were all the better for it.


These took about 10 minutes to make, so they are a good activity with kids who don’t have a long attention span. The piping is pretty easy too – you could try to make them look identical and smooth, but I went for a quick approach and did the squeeze-and-lift, and got what I would politely call the shape of Hershey’s kisses, which I thought looked cute. Someone else in the kitchen said they looked like a tray of nipples, which I ignored! Hey, lockdown has been long and tedious, and we’ve all lost our social filters and have started saying what comes into our heads. Really, first day back in the office? It’s going to be interesting for sure.

Just after baking, the cookies are really nice – light, crisp on the outside and slightly chewy in the middle, and they’re pretty aromatic from the flavourings. Citrus zest was definitely the way to go. These are the kind of cookies which you can put in bowls and people can help themselves to without feeling like they’re eating too much. If you store them for a day or two, they stop being chewy and are completely crisp, which I found made a great companion to ice cream (I’m in lockdown, we need nice things!).

I feel that these are also cookies that will lend themselves to some experimentation. If you were so minded, then I am sure you could fill these cookies in the style of a French macaron. I feel they would suit something sweet and tangy, like lemon or passion fruit curd. They could also be coloured various festive shades, and I can imagine they would look quite jolly with all different shades mixed up in little bags as gifts.

To make Paciencias (makes around 50 cookies):

• 2 large egg whites
• 100g caster sugar
• 1/2 teaspoon vanilla or almond extract
• 30g plain flour
• 1/8 teaspoon baking powder
• zest of ¼ mandarin orange

1. Preheat the oven to 135°C (275°F). Line two baking sheets with greaseproof paper and lightly rub with neutral oil.

2. In a large bowl, start to beat the egg whites until they reach stiff peaks. Now add the sugar, a little at a time, and beat well after reach addition. Keep going until you have a smooth, glossy meringue – it should seem quite stiff. Add in the vanilla and/or almond extract and mix well.

3. Combine the flour and baking powder. Pour into the main bowl and add the orange zest, then fold everything together.

4. Put the mixture into a piping bag fitted with a round nozzle. Pipe 4cm (1.5 inch) circles on the baking sheets.

5. Bake the cookies for around 20 minutes until they are still pale but starting to turn lightly golden.

{1} Spongata Di Natale

Season’s Greetings to everyone! Yes, we’re back for the Twelve Days of Festive Baking 2020 edition!

You don’t need me to tell you that this has, quite frankly, been a year that we’d all like to forget. And given what we’ve all been through it makes those chances where we can come together all the more important. Our original plans were for a low-key Christmas at home and the chance to see a few friends, mostly outside and from a distance. And then about six hours ago we got the news that London would be going into a new top tier of lockdown restrictions. Stay home, no household mixing at all, and you can meet one person in a park. It does put a whole new spin on the Judy Garland song “have yourself a Merry Little Christmas”.

I’m a little late to this year’s baking series as I was not actually sure I would do it. In part I wasn’t sure I was in the mood for it when the news seems unrelentingly grim. And working at home, staring at a screen all day, leaves me less inclined to look at a screen in my free time. But then, it’s just not Christmas without lots of home baking and those lovely aromas drifting up from the kitchen. The trying times that we find ourselves in also lend a different slant to this year’s tour of festive treats from around the world. We might be at home, but we can still take a little gastronomic tour in anticipation of being able to actually travel more next year. So here goes!

I’ve been doing my Twelve Festive Bakes for a few years now, and there has been a strong leaning towards cookies. We’re starting this year off with a recipe that swings the pendulum in the other direction, as we’re going to have a go at a sweet festive tart called spongata di natale from the Italian region of Emilia Romagna. To me this seems like something from the renaissance, and the compete opposite of picture-perfect sugar cookies coated in thick, neat icing.


This tart has a rich filling of fruit, nuts and spices wrapped in pastry, which reminded me of British mincemeat pies. I always like to look around at different recipes before having a go at something to get an idea of whether a recipe is very standard or allows some variety. I found quite a few differences among the recipes – some have more nuts, while others favour using figs, jam and other dried fruits. Personally I liked the idea of something that was a bit further from our mincemeat pies – we’ve been dodging them in the UK since mid-October – so I plumped for a version that was big on nuts and citrus, with the filling bound together with acacia honey and flavoured with spices.


The original recipe that I found actually makes 15 of these tarts! While I’m absolutely in favour of sharing the fruits of my baking efforts at this time of year, that was too much even for me. I mean, I could find 14 other people to give them to, but there is that pesky Tier 4 and the need to limit social contact, so it would have been irresponsible of me to visit lots of different homes with baked goods. So I had reduced the recipe by a factor of five, so that I could make three of them. One for me, one for a friend, and a spare in case it was delicious and I regretted giving one away.

The recipe below seems quite long-winded, as I’ve tried to lay out the various steps, but it is actually quite straightforward. You do it over several days, starting with the filling, then you just need to make a fairly simple dough which you roll out, fill, cover and bake. You are supposed to make the filling and leave this to rest, so it’s a good job to do in a chilly evening, so it is ready a day or two later when you’re full of the joys of Christmas and want to spend time fiddling with pastry. I left my filling to rest for three days as suggested in the recipe I looked at, but in all honesty I don’t know that it really makes that much difference. I did not have the patience to make two versions and compare them, but I like the idea of a bit of ritual in making my Christmas goodies, and it also spreads out the mess in the kitchen and the tidying up. But if you make the filling one day and bake the next, I’m sure it will still taste great.

For the filling, I had to work out the spice quantities as the original amounts were ten grams of cloves, one-third of a nutmeg and a stick of cinnamon. I’ve no idea how those convert into tablespoons and teaspoons, so I’ve ended up with amounts that suit my taste. I would recommend going easy with the cloves, as they are a dominant flavour and it can be easy to go too far. I happen to really like it, but remember the old culinary adage – you can always add more. My experience is that the flavour will also intensify over time after baking, so by judicious with the heavy spices like cloves. They work well here with the nuts and honey, but it is very easy to go to far.


One the filling had lingered in the kitchen for a few days, I got round to making the tarts themselves. The dough is simple – it’s a shortcrust pastry that uses white wine rather than water as the binding agent. It might seem a bit silly, but I always think it seems really decadent to use wine like this. And note that the recipe doesn’t make a lot of dough. At first I thought at first that it was never going to work. The key is that you work the dough a lot – it’s a dough, not pastry, and you want some gluten to develop in there. I persevered and duly managed to roll the dough out very thinly. And lo and behold, it worked like a charm. If you have a go at these, it is just a matter of taking time – roll out the base thinly; add the filling gently and pat it down; then cover it neatly, press out any trapped air, and make sure the edges are nicely finished. During baking the dough does not really move, but it will puff up very slightly and taken on a lightly golden colour. If you’ve ever been disappointed by the pastry-to-filling ratio of a British mince pie, then you’ll like the generous filling ratio of a spongata di natale.

I also made one final tweak to finish off the tart. I brushed the cooled tart with a simple water icing to make it a little more festive. This was not in the recipe, but seemed to be in the picture, and helped to make the whole thing seem a little less like a giant mince pie. If you’re going to keep them for a few days, the icing will dry out completely and take on a lightly frosted appearance, further enhancing their festive appeal.


And the verdict? I really like these. They are really delicious, very festive, and they do seem to be quite medieval in their character. The filling is rich, sweet and sticky, and very aromatic, packed with all the things that would have been outrageously expensive to a medieval Italian merchant looking for a good time at Christmas. They cut well into dainty slivers to enjoy with tea, coffee or an espresso for a dash of la dolce vita that we’re all craving this year!

To make spognata di natale (makes 3 tarts):

For the filling

• 40g breadcrumbs
• 40g sultanas
• 4 tablespoons dry white wine
• 100g walnuts, chopped
• 50g hazelnuts, chopped
• 50g almonds, chopped
• 200g acacia honey
• 30g pine nuts, roughly chopped
• 20g candied citron, finely chopped
• 1/4 teaspoon ground cloves
• 1 teaspoon ground nutmeg
• 2 teaspoons ground cinnamon
• 1 tablespoon olive oil
• pinch of salt

For the pastry

• 200g plain flour
• 80g unsalted butter
• 80g caster sugar
• 40ml dry white wine
• pinch of salt

To finish

• 30g icing sugar
• cold water

1. Preheat the oven to 160°C (320°F). Put the breadcrumbs on a baking tray and toast in the oven until just golden. Watch them like a hawk – there is very little time between done and burned! Remove them when done and leave to cool.

2. Put the sultanas and the white wine in a bowl. Microwave for 1 minute, then cover and leave the sultanas for 30 minutes to absorb the wine.

3. In a large bowl, add the chopped nuts, toasted breadcrumbs, pine nuts, candied citron, spices and salt. Mix well. Drain the sultanas and squeeze out any excess moisture (keep the liquid). Chop them and add to the bowl.

4. Gently warm the honey to lukewarm in a saucepan over a low heat. Stir in 2 tablespoons of the reserved sultana wine. Pour it into the bowl, and mix well. Taste the mixture and add any more spices if you think they are needed. The resulting mixture should be sticky and very thick. Cover the bowl, and leave it in a quiet corner either overnight or up to 3 days, at room temperature, for the flavours to mingle.

5. Make the dough. In a bowl mix the flour, sugar and salt. Add the butter and work until it resembles breadcrumbs. Now add enough wine to make a dough which is smooth, shiny and pliable. Knead it for around 10 minutes.

6. Time to assemble the spognata. First, preheat the oven to 190°C (375°F). Mix a tablespoon of wine with the filling, then divide the filling into three (200g) portions, and place to one side.

7. Divide the dough into 6 pieces. Take one piece and place it on a large piece of greaseproof paper. Roll to a thickness of 1-2mm (i.e. very thin). Cut a circle of 25cm – the easiest way to do this is to find a saucepan lid or a dinner plate of the correct size, and use that as a template.

8. Now take one portion of filling and spoon it onto the disc. Gently press it into a disc that covers most of the dough, leaving a 3cm border (i.e. 19cm diameter). Place this on top of the pastry disc.

9. Take another piece of dough and roll out to make another disc. Brush the exposed edge of the first disc with a little water, and place the second disc on top. Press down lightly, then gently use a rolling pin to go back and forwards over the cake a couple of times, then press the pastry down all around the cake to press out any air bubbles. Seal the pastry with your fingers, then cut around the edge with a fluted pastry cutter or a knife. Pierce the top of the spognata several times with a fork – either randomly, or try to make some sort of pattern.

10. Slide a baking tray under the spognata, and put in the oven. Bake for 15-20 minutes until the pastry is golden (turning half-way to get an even colour). Do not leave it in any longer or it will dry out the filling. Remove from the oven and allow to cool.

11. Repeat with the remaining filling and pastry.

12. Finish the spognata either with a dusting of icing sugar, or by brushing the top with a simple water icing glaze.

Cake of the Week: Lemon Drizzle

You’ve had cookie of the week, so here is our first cake of the week! I’ve actually been quite blown away from the feedback on the first part of my lockdown baking, and one reader has even made the Fryske Dúmkes and confirms they are easy and delicious. The next cookie is coming tomorrow…

In the last few days it has started getting much warmer in London, and we’ve just had some glorious sunny days. It seems so strange to imagine a parallel world in which we’re off out in parks, walking by the river, thinking about a trip to Kew Gardens to see blossom and daffodils and planning Easter trips to beauty spots. But as temping as any of that might seem, it is all off limits as part of our efforts to support the greater good. Just peek out the windows and you will see rainbows painted by children reminding you to #StayHomeSaveLives. There has been some debate in the UK about exactly what the rules mean and how far people can interpret them. Personally I think it’s pretty obvious that we need to say at home, only shop for food once per week, and while we’re allowed out for exercise once per day. And in doing this, we need to avoid other people. Yes, it’s a pain, but if we all play our part, we can only hope that our corona lockdown will pass sooner.

What this period has enabled me to do is to fish out some craft ideas from deep in my memory for entertaining my son. The big hits this week were colour chromatography (separating the colours in ink using filter paper) and drawing out a map of the London Underground. He managed to do pretty much the whole thing from memory! Next week is the two-week Easter Holiday, so home school is shut and we’ll have holiday club based around “theme of the day”. Today was “France”, Tuesday is “London Transport”, Wednesday is “Plants” and the rest of the week is still under development. Ideas welcome!

Anyway, back to cake, as that’s what you’re here for. As spring creeps upon us, I decided to make a cake which has a little sunshine in in, and opted for lemon. This is one of the iconic British classics – it is a sponge loaf cake and while it is still warm you pour over a syrup of granulated sugar and lemon juice. Then you leave it to cool, and the glaze forms a crunchy, tangy glaze on top and makes sure that they cake is very moist. We’ve enjoyed it over the last week each afternoon. This is definitely one to have with a cup of tea (Earl Grey, pinkie raised) rather than coffee, and the bright, zesty flavour is a much needed pick-me-up as the afternoon air feels warm and pleasant.

If you want to play around with the flavour (or you need to make do with what you have at home) then you can use whatever citrus fruit you like. You could make it with just orange zest, go for a St Clements cake (orange and lemon, like the famous song) or make it even more tropical with lime. Grapefruit might even be interesting – but a caveat that I have not tried it, but if you do, let me know if it worked!

To make a Lemon Drizzle Cake (makes one 1lb loaf)

For the batter:

• 175g white caster sugar
• 175g softened butter
• zest of 1 lemon
• 3 medium eggs
• 175g self-raising flour
• 3/4 teaspoon baking powder
• 1 tablespoon milk

For the glaze:

• 100g granulated sugar
• juice of 1 lemon

1. Preheat the oven to 170ºC (340ºF). Line a loaf tin with greaseproof paper.

2.Put the eggs, sugar and lemon zest in a large bowl. Beat until pale, light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the flour and baking powder, and mix well. Finally add the milk and beat to a smooth batter.

3. Pour the batter into the prepared tin. Bake the cake for around 40 minutes. An inserted skewer should come out clean and the surface should be springy when lightly pushed. If it looks like it is getting too dark, cover it loosely with tin foil. When done, remove from the own and place on a wire rack. Do not remove from the tin.

4. Immediately make the glaze. In a bowl, mix the lemon juice and granulated sugar. Pour evenly over the warm cake, then leave to cool completely.

{9} Parrozzo

A couple of years ago, I made Marquesas de Navidad, some little Spanish Christmas cakes which at first I thought had some ancient pedigree, but which were actually created in the early part of the 20th century. Traditional recipes and classic bakes are great, but I also think it is nice that new things still appear from time to time.

And today is another fairly new kid on the block. This cake is called a Parrozzo. It was created in 1920 by an Italian gentlemen called Luigi d’Amico, who ran a pastry shop in Pescara in the Abruzzo region of Italy.

However Luigi’s idea was actually a modern take on a traditional local recipe called pane rozzo which means “rough bread”. This loaf had a domed shape and a dark colour due to being baked in a hot wood-fired oven. So his sweet Parrozzo kept the domed shape in homage to the source of his inspiration, and the chocolate glaze imitated the dark colour the bread would have gained during baking.


The Parrozzo is actually an almond sponge. It is traditionally flavoured by the judicious use of a few bitter almonds to provide the distinctive flavour. I’ve written already this year about how these can be risky if eaten in quantity, but I’ve taken the lazier route of using normal (sweet) almonds and added some almond extract. Some recipes also use lemon zest, which I’ve opted to use as I think it works very well with almonds, and lifts the flavour of the cake. You could miss out the lemon, or swap it for orange zest if you fancy something a little punchier.

The cake is finished with a simple chocolate glaze, but fret not – you don’t need to worry about tempering chocolate to get a nice sheet, you just melt chocolate with butter, and forget about the science of tempering and getting the right sort of chocolate crystals for a set. It’s Christmas and we’ve all got too many things to get done! You just melt, add butter, stir and pour. Job done!

This makes a fairly large cake, and it looks quite impressive as a centrepiece. I think it benefits from being made a couple of days in advance. The texture is light but not too fluffy, cuts well, and stays moist thanks to the butter, eggs and almonds in the batter. We really enjoyed this one – it tastes festive, but is very different to the fruit and spices of a British Christmas cake.

And as if a chocolate-covered dome cake that is impersonating a loaf of peasant bread is not exciting enough, this cake even has its own song: La Canzone del Parrozzo (the Song of the Parrozzo) written by poet and politician Gabriele D’Annunzio. It is a tango, and reminds me a little of the Italian socialist classic Ciao Bella.

To make a Parrozzo:

For the cake:

• 150g plain flour
• 150g ground almonds (skin on)
• 1 teaspoon baking powder
• 6 large eggs
• 50g butter, melted and cooled
• 250g caster sugar
• 2 teaspoons almond extract
• 1 teaspoon vanilla
• 1 tablespoon lemon juice
• zest of 1/2 lemon

For the glaze

• 200g dark chocolate
• 50g unsalted butter

1. Preheat the oven to 170°C (340°F). Prepare the cake mould (I used  20cm /8 inch hemispherical tin). Rub the inside really well with butter then dust liberally with flour. Shake out the excess.

2. Mix the flour, almonds and baking powder. Set aside.

3. Separate the eggs.

4. Beat the egg yolks, sugar, melted butter, almond extract, lemon zest and lemon juice for about 5 minutes until pale, thick and creamy.

5. In a separate bowl, whisk the egg whites to stiff peaks, around 4-5 minutes.

6. Folk the yolk mixture into the egg whites.

7. Fold in the flour mixture in 3 batches, as gently as you can until just combined.

8. Carefully pour the batter into a cake tin and bake for around an hour until an inserted skewer comes out clean. If the top looks like it is getting too dark cover it loosely with tin foil. When it is ready, remove from the oven and allow to rest for 10 minutes, then turn the cake onto a wire rack to cool completely.

9. Finish with the chocolate glaze. Melt the chocolate in a microwave (or use a bowl over a pan of barely-simmering water) then add the chocolate butter and stir until completely smooth. Pour the glaze over the cold cake, and either try to get it as smooth as possible, or make life easy and aim for generous swirls.

{8} Broas Castelares

I’ve looked for quite a long time for a Christmas recipe for Portugal. I’ve found ideas galore from Spain and Italy, but for some reason I wasn’t seeing anything from the Lusophere. That is, until now.

I’ve made little sweet potato cakes called broas castelares. The name means “Castile corn breads” and they are named after their creators, the Castelar brothers who ran a bakery called the Confeitaria Francesa, or French Patisserie, in Lisbon. It was founded in 1860 and stood in the Rua do Ouro, or “Street of Gold”, which I think is rather fitting given the colour of these cakes.


Now I say “cakes” but this recipe is a very different way of baking to the festive recipes I have tried before. This is based on sweet potato puree, which I made by roasting some sweet potatoes and scooping out the tender flesh. I thought this would give a better flavour than boiling as it would keep (and perhaps even concentrate) their flavour. Then you mix this with sugar, and the whole lot turns from sort-of-fluffy mash into a gloopy, soupy mass – I’ve seen this before making a Scottish potato-based sweet, and it seems odd that you can add dry sugar to something and it seems to get wetter!

I saw a few different versions of this recipe with different amounts of sugar. These seemed to split into Portuguese recipes and then those from everyone else. The home of Fado makes extremely liberal use of sugar, so I figured that it was safe to assume these little guys were going to be on the sweet side. This expectation was further supported by lots of non-Portuguese bakers trying to cut down the amount of sugar. Choices, choices. In the end, I decided to plump for a more authentic Portuguese version. This is a Christmas sweet after all! The version I went with came from the website of Lisbon City Council. Surely these guys would get it right?


The actual recipe is fascinating – the base is sweet potato (the orange ones, not the white ones) that you turn into a basic jammy paste. Then you mix in eggs, and add a veritable cornucopia of other nice things – ground almonds, cornmeal, coconut and orange zest. Some of the recipes suggested adding cinnamon to taste – I skipped this, but I think this could be a nice addition. You then end up with one of the stickiest doughs I’ve worked with. You leave it to chill overnight, and I thought the dry ingredients would have soaked up some of the liquid and made a thicker dough. I was wrong. The next day, it was slightly thicker but still seemed to be as sticky! But the way to deal with this is to have a plate with some neutral oil on it, and keep your hands well-coated. Any by coated, I mean pressing your palm into it, pretty often as it turned out. Then nothing sticks!

Shaping the broas was easy, provided you are making liberal use of that oil. Take a tablespoon of the mixture, roll to a ball, then form into an oval shape – I noticed that longer, slimmer ovals kept their shape better than shorter, fatter ones. The skinny ones set and keep their shape, the more squat ones seemed to spread more. Then make (or try to make) a little dent in the middle so they look like golden giant coffee beans. They are then finished with an egg yolk glaze, and baked in a hot oven.


And how do they taste? Amazing! I expected something more cake-life and reminiscent of cornbread, albeit sweet, but in fact they are more like marzipan, so I would call them a type of candy rather than a bread or a cake. As I expected, they are extremely sweet – sweet, sweet, sweet! Delicious, but for me this is something you want to eat with strong coffee or tea, rather than with mulled wine unless you’re the sort of person that wants to embrace hyperglycemia. The good thing is you can serve a tray of these and be confident that people will self-police and no-one will scoff the lot.

I hope you like this. I wasn’t sure I would and I am completely convinced. Obrigado e feliz natal!

To make Broas Castelares (makes around 40-45)

For the dough

• 1 large or 2 medium sweet potatoes (at least 500g), to yield 400g cooked flesh
• 700g soft brown sugar
• 125g ground almonds
• 50g desiccated coconut
• 125g cornmeal (fine polenta, not corn starch)
• 75g plain flour
• 3 medium eggs
• Zest of 1 orange

To finish

• vegetable oil, for your hands to work the dough
• 2 beaten egg yolks, to glaze
• tablespoon of water

1. Heat the oven to 200°C (400°F). Prick the sweet potato, then put in the oven and bake until it is soft. You should be easily insert a knife. This will take 45-60 minutes. When done, remove from the oven, cut the potato in half and scoop out the flesh – you want 400g of cooked sweet potato.

2. Put the cooked sweet potato flesh in a saucepan, and mash it. Do this manually – if you use a blender it may affect the texture. Add half the sugar and mix – it will look a bit transparent and become wetter. Cook over a medium heat for around 5 minutes, stirring constantly. It is done when you pull a wooden spoon across the base and leaves a clean trail that holds for a few seconds. Remove from the head and leave to cool to lukewarm.

3. Put the potato mixture in a large bowl. Add the eggs, and mix well. Stir in the remaining sugar, ground almonds, coconut, orange zest, flour and cornmeal. Mix to a smooth batter – it will be thick but sticky. Cover and chill overnight.

4. The next day, preheat the oven to 200°C (400°F). Prepare a few sheets of greaseproof paper and rub each with some vegetable oil.

5. Get your hands covered with vegetable oil, and keep some extra within easy reach to re-coat your hands as needed. Take a tablespoon of the mixture and roll it into a ball. Now shape into a long oval between your palms. Place on the greaseproof paper, then flatten and make a dent in the centre so they look a bit like coffee beans. Repeat until the sheet is covered – they will spread slightly so leave at least 5cm between them.

6. Make the glaze – mix the two egg yolks with a tablespoon of cold water, and mix well.

7. Slide the tray under the paper, then glaze the broas. I found it best to do this just before baking, and really get in around the sides and base as this seems to help them keep their shape. Bake for 15 minutes – the top might look mottled and very dark in some places, but this is normal. Leave for a moment to cool and set, then transfer to a wire tray.

Note: the broas are a little crisper on the outside when they are fresh, but will soften if you store them overnight in an airtight container.

{7} Cordiales de Murcia

I am a big fan of marzipan, so Cordiales de Murcia really caught my eye. They are traditional sweets that originate in the town of Pacheco in Murcia, Spain. Their filling is also a little unusual – cabello de ángel, a sort of pumpkin jam.


The name cabello de ángel means “angel’s hair” and comes from the texture of the pumpkin. When cooked, the flesh of the pumpkin separates into lots and lots of strands. It is turned into jam and flavoured with citrus and sometimes a dash of cinnamon, but the pumpkin keeps quite a bit of its texture, so think of it as being candied more than turning into a jam. I find it tastes a bit like apple jam, maybe with a hint of apricot. I’d had this in pastries on visits to Spain, and it took me a while to work out what the filling was, since it seemed to be apple but wasn’t quite.

Anyway, I had a jar of this stuff in my store cupboard for ages from a trip to Spain last year. I had planned to use then, got everything ready to make these cordiales and then remembered that at the end of summer I had used it all in the based of a quick apple tart. If I was going to make them, I would have to hunt high and low for a pretty niche ingredient, for it turns out that unlike membrillo, manchego or chorizo, you quite quickly find that cabello de ángel is not really stocked anywhere easy.


The Spanish supermarket near Ladbroke Grove was reporting on their website that they had sold out, so I had to trawl a number of websites to find one that, firstly, sold the stuff, and secondly, would be able to deliver it quite quickly. The good news is I managed (even if it meant paying a lot more than I would have had to do if I had been organised!). But if you don’t have cabello de ángel then you could use Spanish sweet potato paste or quince paste, or in fact any sort of very firm jam or fruit paste. You just want to avoid something too liquid, which could melt and pour out of the sweets during baking.


The actual baking process is quite easy – you make marzipan, then work out how to stuff it. The dough is quite soft, so I found the easiest way was to put a piece on some greaseproof paper or cling film, then cover and squash it flat. Then you can add some jam to the middle, and gather the edges up without everything sticking to your fingers. My first few attempts were cake-wrecks, so just do a bit of trial and error and find a method that works for you.

Once you’ve stuffed your cordiales, you need to shape them and it is traditional to place them on a circle of wafer. I normally don’t do this as the brand of greaseproof paper I use never ever sticks to whatever I am baking, and there is enough oil from the almonds to prevent sticking, but I wanted to go traditional here.

Now, I’ve mentioned the effort I went to in order to get that pumpkin jam? Well there were some recipes that suggested using discs of communion wafer, but by this point my commitment to authenticity had fallen asleep by the roadside, so I got hold of some rice paper and cut out circles of that. In fact, this actually worked really well, as you are able to shape them really easily and move them around on their pieces of rice paper (or wafers).

The most important question is, of course, how did they taste? Absolutely delicious. The marzipan has that lovely flavour of almonds and lemon from the zest, and the filling keeps the filling soft and is a little like apricot or even a gentle marmalade. They are slightly crisp when you’ve just baked them, and if you like them softer, just keep them overnight in a sealed container, and they will soften right up. All in all, a lovely addition to the festive table, provided that you’re willing to track down the right sort of filling, and you’ve got the patience for lots of shaping and stuffing!

To make Cordiales de Murcia (makes around 25-30):

• 250g ground almonds
• 1 teaspoon almond extract
• 200g caster sugar
• 2 medium eggs, beaten
• zest of 1/2 lemon
• 200g cabello de ángel jam

1. Make the marzipan mixture. Combine the ground almonds, almond extract, sugar and lemon zest. Mix well, then add one beaten egg. Mix, and then add enough of the second beaten egg to make a marzipan. It should be soft enough to work with, but not wet or sticky. I used just over half of the second egg. If you add to much egg, just add equal amounts of almonds and sugar to get a texture you can work with.

2. Preheat the oven to 170°C (340°F). Line two baking sheets with greaseproof paper.

3. Pinch off walnut-sized pieces of the marzipan. Flatten between two pieces of greaseproof paper. Add a small teaspoon of the angel hair jam (the size of a small grape). Fold the marzipan around the jam, seal, and roll into a ball.

3. Place the ball on a piece of rice paper, and shape to a slight cone with your fingers. Repeat until all the marzipan has been used up.

4. Bake the cookies for around 20-25 minutes until golden but not dark. Turn the tray half-way to get an even colour. Remove from the oven and leave to cool

5. To serve, dust lightly with icing sugar. Go easy, as these things are sweet, so you’re dusting for effect more than anything.

{6} Panpepato

It’s the sixth post in this year’s Twelve Bakes of Christmas, and the kitchen is still standing! I know I’ve still got six more recipes to go, but where would the fun be if I wasn’t surrounded by sugar, spice and all things nice at this time of year? Well, that plus a whole lot of mess, a sugar thermometer and more than a few burns due to my tendency to use tea towels rather than proper oven gloves…

Today’s recipe is a delicious Italian sweet treat called panpepato, which means “peppered bread”. It is associated with the Province of Ferrera on the Adriatic coast. It has more than a passing resemblance to panforte, but panpepato is dark in colour, flavoured with cocoa, chocolate and pepper, and sometimes even coated in yet more chocolate.


This is a cake with a long history, with some sources suggesting it can be traced back to the 11th century. Panforte and panpepato would originally have been consumed by the aristocracy – with sweet candied fruit and spices, these were firmly luxury confectionery. And as with many traditional recipes, there are various origin myths about which came first.

Some suggest it started with panforte, and panpepato was later created during a siege with candied fruit to address the lack of fresh fruit or less choice in terms of ingredients for the panforte. Others suggest panpepato is where it was at originally, and panforte was a later creation with lighter ingredients in honour of Queen Margherita of Savoy’s visit to Siena in 1879. Of course, just where cocoa and chocolate came from in medieval Italy is left unclear! Whichever version is true, they’re both delicious. And finally…those spices? They were thought to have aphrodisiac properties, bringing troubled couples together. Perhaps a slice of panpepato promises not just delicious flavours but a night of romance when it is chilly outside?


I was really pleased with how easy this was to make and how this turned out. Sometimes a recipe can feel like a slog, especially where you have lots of steps to follow, but it was really pleasant to prepare the almonds, hazelnuts and candied peel, and then measure out the various spices.

Beyond the measuring, you don’t need to more than pour all the dry ingredients into a large bowl, make a syrup from honey, butter, sugar and a few pieces of dark chocolate, them mix the lot and bake it. Once it came out of the oven and had cooled down, I dusted it with cocoa and rubbed it with a pastry brush. Some recipes suggested icing sugar, but I thought this would look a little more sophisticated. Other recipes suggested a coating of chocolate, but I think that would have been too rich even for me!


The flavour is reminiscent of British fruit cake, but without all the dried vine fruits – you’ve got nuts and candied citrus, plus spices and a bit of depth from the cocoa and chocolate. There isn’t really a chocolate flavour as such, but I think the cocoa helps provide a balance to the sweetness of the honey and sugar. And of course the cocoa also provides a dramatic contrast to the pale cream colour of the almonds and hazelnuts. Some recipes suggest coarsely chopping the nuts, but I love the pattern of the whole nuts when you slice into the panpepato.


From what I have found, there is no single “correct” recipe that you have to follow. You can play around with the types of nuts you use – just almonds, just hazelnuts, or add some pine nuts or pistachios – and there are various different dried fruits you could use. Some recipes have figs or sultanas, and even more exotic items like candied papaya or melon could be interesting. Finally, you can also try different spices in this recipe, but I do think you need to have that black pepper as a nod to this recipe’s origins.

I’d look at this as a sweet, rather than a cake or a bread. It is absolutely delicious, but it is also incredibly rich, so you might be surprised just how little of it you want to eat in one go. It is also a treat that will last for a while, so a good one to have prepared for surprise guests. I think it is great with tea or coffee, cut into very thin slices and then into nibble-sized morsels.

To make Panpepato (makes 1 slab)

• 150g skinned hazelnuts
• 150g blanched almonds
• 100g candied orange peel
• 100g candied lemon peel
• 50g plain flour
• 30g cocoa powder
• 1 teaspoon ground cinnamon
• 1/2 teaspoon ground black pepper
• 1/2 teaspoon ground nutmeg
• 1/2 teaspoon ground coriander
• 1/4 teaspoon ground cloves
• 100g caster sugar
• 225g orange blossom honey
• 3 tablespoons water

• 50g dark chocolate
• 25g unsalted butter
• Cocoa powder, for dredging

1. Preheat the oven to 180°C. Put the nuts on two separate trays, and toast in the oven for 10-15 minutes until fragrant and just golden. Watch them closely – the hazelnuts will be done before the almonds. When ready, remove from the oven and leave to cool.

2. Rub some greaseproof paper with a little vegetable oil, and use it to line a 20cm square tin. If you prefer, you can also use rice paper but this will stick to the finished panpepato – it’s a question of personal preference.

3. Reduce the oven heat to 150°C.

4. Chop the peel into fairly small chunks. Place in a bowl with the nuts, flour, cocoa powder and ground spices. Mix well.

5. Put the sugar, honey, water, butter and chocolate into a saucepan. Heat gently until the sugar dissolves, and boil until the mixture reaches the “soft ball” stage (or 113°C/235°F on a thermometer).

6. Pour the syrup onto the dry ingredients and mix well. Transfer to the tin. Use a metal spoon or spatula rubbed with a little butter or oil to flatten the mixture.

7. Bake the panpepato for 35-40 minutes. The surface will look “set” when the panpepato is done. Remove from the oven and leave to cool completely. If you have an uneven panpepato, take a piece of greaseproof paper rubbed with a little oil – lay on top of the still-warm panpepato and press to even it out.

8. Remove the panpepato from the tin, peel off the greaseproof paper and trim off the edges (they will be a bit hard). If using rice paper, leave it on the panpepato. Dust the top lightly with cocoa and rub lightly with your fingers or a pastry brush so a bit of the fruit and nut detail shows up.

9. Store in an airtight container. Cut into thin slices to serve.

{4} Piparkakut

Gingerbread biscuits are found across the Nordic countries around Christmas time. There are some different shapes, different spices and some might have nuts or fruit added, but they share a spicy flavour and crisp texture. The Finnish version are piparkakut. I won’t even try to work out if that is the singular or plural name, as the Finnish is fiendishly complex! Instead I will distract you with my “elk in a snowy forest with squirrels under the stars” gingerbread fantasy. Hands down these are my favourite cookie cutters from what is probably an unnecessary large collection to being with!

These cookies are incredibly more-ish. Because they are so light and crisp, you can happily much on two, or three, or four of them, and really not get full at all. In contrast, try eating four British mincemeat pies in one sitting and you’ll be floored for the rest of the day!

I made these using “dark syrup” (tumma siirappi in Finnish). This is a thick, sweet syrup that has almost a chocolate-like flavour, but none of the bitterness of molasses or black treacle. It also seems to be the right stuff as a quick search online shows pictures of syrup containers with gingerbread figures on them! But if you can’t get hold of this stuff, you can happily use golden syrup. Honey would work in a pinch, but it tends to produce slightly different results, so you might not get the same crisp texture as you get with syrup.

I made these once with a special ingredient that I thought would make them extra-fancy. I had dried some peel from Seville oranges, so I thought I would grind it up and add it to the dough for an extra aromatic orange flavour. Well, it worked…except that it worked just a little bit too well. The flavour and aroma were superb, but after a moment a strong medicinal flavour and a numbness took over, rather like sucking on a throat lozenge. Sadly my attempt to be fancy just ruined the whole batch! I did leave them for a couple of weeks in a dark cupboard in the hope that they would improve, but that eye-wateringly extreme orange flavour was still there, lurking in the dark, waiting for me. Never again! Just stick with a normal orange, or perhaps some Clementine or mandarin zest if you want to feel fancy. I’ve still got that jar of dried Seville orange peel hidden in a cupboard, taunting me…

This recipe is great if you want to make a lot of very intricate cookies that keep their shape after baking. As you can see, the various cutters I used worked really well and I got nice sharp edges. I mean, if you’re going to go to the effort of making an elk, you want people to know that it is an elk, right? I’ve left them plain, but you can easily coat them in dark chocolate, or ice them with intricate patterns.

Finally, a word of caution. You might think a teaspoon of baking soda is not really enough in this recipe. Well, don’t be tempted to up the quantity of baking soda – I’ve tried adding more to provide more rise (assuming this would provide a crisper cookie too) but it easily turns into a soapy aftertaste. Yes, I’ve had a few issues with trying to mess around with this recipe in the past!

Makes around 40-50 cookies

• 110g (80ml) dark syrup or golden syrup
• 100g caster sugar
• 100g butter
• 2 teaspoons ground cinnamon
• 1 teaspoon ground ginger
• 1/2 teaspoon ground cloves
• zest of 1/2 orange
• 1 large egg
• 400g plain flour
• 1 teaspoon baking soda
• 1/4 teaspoon salt
• cold milk, to bind

1. Put the syrup, sugar, butter, spices and orange peel into a saucepan. Warm gently, then bring to the boil. Leave to cool.

2. Beat the cooled sugar mixture with the egg until fluffy. The mixture will be very soft.

3. Mix the flour, baking soda and salt, and stir into the rest of the ingredients. Add more flour if too wet, or add cold milk (a tablespoon at a time) to bring it together. Wrap in cling film and leave to chill overnight in the fridge.

4. The next day, preheat the oven to 150°C (300°F). Line a baking sheet with greaseproof paper.

5. Roll out the dough thinly (around 3-4mm). Cut out the cookies and transfer to the baking sheet. Tip: roll the scraps together and pop in the freezer to chill – it makes the dough easier to work with.

6. Bake for around 10-12 minutes until browned and slightly puffed, turning half way to get an even bake.

Note: It is worth baking one cookie first to test how long you need to bake them. If you are making different sizes, it is best to bake the same sized cookies together. Also be careful if your cookies have thin parts (like the legs on the elk) as they can burn easily.
