Pumpkin Pita Pie

When it comes to selecting blogging themes and developing ideas, pretty much everything I do is based on ideas I have or some sort of national or international event (Olympics, Royal Wedding, Norwegian National Day), but from time to time it’s nice to get a suggestion of something new. And so it was then I was recently asked by the folk at Sunvil Supper Club if I wanted to try a recipe for pumpkin pita pie. It sounded rather nice, so I thought I’d give it a go and said yes.

At this point, I’ll share a learning from a now-wiser person – don’t agree to do anything when you are on holiday, as you will feel for a couple of weeks as if you have all the time in the world. Then you arrive back home in your blissed-out state, only to realise you’re up against the baking clock. Eek!

Anyway, this recipe is for a Greek savoury pie combining the sweetness of squash with the saltiness of feta, and enlivened with a dash of mint. It’s all quite easy to make, although I did come up against two little issues during my attempt.

First, the recipe wasn’t too clear about whether I should be using just tinned pumpkin puree, just mashed up butternut squash, or some combination. I think it was a choice, rather than both, and the fact I failed to read the recipe until I got home was a bit of a bummer. I had just come back from the United States, where the shelves were groaning under the weight of tinned pumpkin. But could I find it in Clapham? Nope. I had a look in a few stores, but wherever it was, it was hiding from me, and I just gave up (remember that jet lag?). I went instead for the idea of just mashing up a whole squash. That seemed the way that a Greek granny would do it, so I should do that too.

The second thing I grappled with a little bit was the way that the pie should be formed. I assumed you lined the tin with several layers of pastry, brushing with olive oil between each layer, then dump in the filling, then cover again with more filo. However, it was (inevitably) more complex than that, involving preparing sheets of pastry, brushing with oil, adding a little filling, rolling into a cigar shape, then lining them up in a coil in the pan. Once you know what you’re doing it’s a breeze, but I would advise you not to use a pastry brush for applying the olive oil. Just put the oil into a bowl and dip your palm in there. It’s more fun to do it this way, and your hands will end up nice and soft.

To finish off my pie, I took a bit more filo and tried to wrap it artfully into a sort of swirl on top, and when it came out the oven, it did indeed look golden and inviting. The flavour of the pie is superb – rich sweetness and sharp salt, topped with very crisp pastry, complemented by a green salad (as suggested in the original recipe). This pie is tasty while warm, but is also nice cold, so I’m looking forward to wedges of this over the next few days for lunch.

However, if I were to have another go at this recipe, I’d make one little tweak. Instead of the pie shape, I would instead make smaller fingers of the filling wrapped in filo, like mini savoury strudels. Christmas is just around the corner, and we’ve all the need for handy little recipes that we can use to wow our guests. This should be super-easy to make ahead of time, then just pop into the oven, serve with drinks and enjoy the kudos.

However, if you’re convinced the by the coiling approach, this is how it looks – rather nice, yes?

To make a Pumpkin Pita Pie (adapted, original recipe here):

• 1 large butternut squash (around 500g once peeled)
• 3 tablespoons olive oil
• 3 onions
• 340g feta, crumbled
• 2 eggs, lightly beaten
• 1 1/2 teaspoons dried mint
• 2 tablespoons uncooked rice or bulgar wheat
• freshly ground black pepper
• 400g filo pastry

Prepare the squash:

1. Peel the squash, remove seeds and chop into chunks. Place in a large bowl with a spoonful of olive oil and mix with your hands until the squash is coated. Put the squash chunks into an overproof dish, and roast in the oven at 200°C (400°F) for around 45 minutes until tender and the edges are just starting to brown. Turn off the heat, and leave the squash until cool (easiest to do this the night before, and leave to cool overnight).

Make the filling:

2. Chop the onions, and saute with two tablespoons of olive oil until they are lightly browned and translucent. Leave to cool.

3. Take the cooled squash and mash or puree as you prefer. I like chunks of squash, so prefer to mash and leave some texture.

4. In a bowl, combine the squash, feta, cooled onions, eggs, mint, black pepper and rice/bulgar wheat. Mix until combined, but make sure you still have visible pieces of feta.

To assemble to pie

5. Preheat the oven to 175°C (350°F). Get hold of a large springform pan (the recipe called for one that was 14 inches (35cm), mine was nearer 9).

6. Take a piece of filo pastry. Lay it lengthways in front of you, and brush olive oil on the lower half (or smear with your hands). Brush again with oil. Add a little of the filling along the middle of the strip, then roll into a cigar. Aim for 1 inch (2.5cm) diameter. Brush with olive oil, or rub with oily hands.

7. Repeat the process, placing each roll into the pan, start at the edge, to build up the pie. You should end up with some sort of spiral. To keep things neat, arrange the rolls with the seam underneath, and lay the coils in the tin as tightly as you can.

8. One all the filling has been used, brush the top of the pie with a little more olive oil, then bake for around 50 minutes until the top of the pie is a rich golden colour.

Worth making?This is a classic flavour combination, and works very well in a pie like this. The mint is a welcome addition. Highly recommended, either as a pie or as the basis for festive party food (just reduce the cooking time).

Tumis Buncis (Indonesian Green Beans)

Gosh, it has been a rather hectic week! Packing, sorting, tidying and living between two places. However, it’s also a rather cathartic process of sifting through what feels like mountains of “stuff” and getting rid of things that I either no longer want or need. One of the perks of where I live at the moment (Stoke Newington) is that if you put something in the street that is vaguely usable, it’s a virtual certainty that someone will take it and give it a new home. As a result, I’ve managed to de-clutter without actually throwing much in the bin. Result!

As part of all this packing, I’ve also rediscovered some long-lost items. Old t-shirts which I had forgotten but which I now love once more, books that I read years ago and want to read again, photos from my travels and…my recipe file. Yes, I’m old enough to have a recipe file. I started this when I lived in Brussels and it contains recipes from magazines, Internet print-outs and some scrappy hand-written ideas. As you can tell, this pre-dates the days when everyone has Internet access at home, and back then there was a need to have a bundle of never-fail recipes at your fingertips.

Funnily enough, I recently read an article in which the author was musing about the way that we record our recipes today. Wind back a decade or so and it was all about writing down recipes or cutting them out of magazines, but in the age of online content and blogs, there is just not that imperative to tear out recipes from the weekend papers to file for later reference. So it seemed fortuitous to me that I dug out my old file, and I was rather curious about what was in there.

Leafing through, I came across a simple but quite tasty recipe that I received from an Indonesian colleague when I lived in Brussels. It’s incredibly simple – just garlic, green beans and tomatoes, seasoned with salt, sugar, nutmeg and sambal or chili. It makes a great main dish with rice and some chopped peanuts, or as a side dish. The nutmeg in particular adds a little extra something to the overall flavour. So there you have it – a recipe for tumis buncis rediscovered as part of my packing, and I suspect the last recipe that I post from North of the River!

To make tumis buncis (main for 2 or side for 4)

• 350g green beans, washed and sliced diagonally
• 350g cherry tomatoes, chopped
• 2 cloves garlic, peeled and chopped
• 2 tablespoons oil
• 1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon ground nutmeg
• sambal or chili

Heat the oil in a large saucepan. Saute the garlic for a couple of minutes.

Add the green beans and tomatoes and cook for a further two minutes. Add the salt, sugar, nutmeg and sambal/chili and cook on a high heat until the tomato juice has made a slightly thick sauce, but the beans are still firm. Check the seasoning, and add more salt and sugar if needed.

Serve with white rice, and if you want to go to town some satay (peanut) sauce.

Worth making? This is a really easy dish to make, but bursting with flavour from the tomatoes and nutmeg. It all comes together to make a very satisfying dish that can be whipped up in a few minutes, and makes a great main or side dish.

Fourth of July: Boston Baked Beans

Today it’s the Fourth of July – so let’s make something traditionally American, the good old-fashioned Boston Baked Beans!

Well, I say “good old-fashioned” but actually, I don’t know very much about them other than I like their name, so I thought it was about time to give them a bash. And a recipe from The Well-Cooked Life looked just perfect.

I know some people get terribly snobbish about baked beans and don’t like the tinned ones, but I’m not one of them. One of life’s greatest pleasures is a Saturday morning involving toast covered in cheese, grilled and then topped with baked beans. Delish.

Nevertheless, I was intrigued by the idea of making beans from scratch that had a bit more pep to them. A few minutes on Google told me that they are normally made with salted pork and molasses, so you’ve got a powerful savoury/salty yet sweet flavour. Clearly the pork was not going to happen in my case, so I added a bit of soy sauce instead to get more “savoury” than just salt would contribute. The other ingredients also promised something rather grand – lots of spices, hotness from sambal (my preferred way of adding heat to a dish), sweetness from molasses and fried onions and sharpness from some cider vinegar.

Boston Baked Beans are also a complete doddle to make, albeit a little planning is needed to make sure that the beans are properly soaked and cooked, but it’s mainly a case of soak, boil beans, mix sauce, bake.

One little wrinkle that affected my beans – I didn’t have dinky little beans (like you get from the tinned ones) so I used the ones I had in my cupboard, which were crab-eye beans. They were a little larger, and stayed a little firmer when cooked. They were still delicious, but when I make these again, I’ll be using the smaller beans in the future.

What you do need to be prepared for is that these beans are not a neon orange hue – all that molasses or treacle makes the sauce a rich red-brown colour. However, the flavour is completely, totally, utterly sensational. The sum is greater than the individual parts – and actually, that makes this a rather fitting dish for Fourth of July.

To make vegetarian Boston Baked Beans (adapted from here):

• 350g beans
• water
• 3 tablespoons oil
• 1 clove garlic, chopped
• 1 teaspoon salt
• 2 white onions, chopped
• 2 heaped teaspoons paprika
• 1 teaspoon ground nutmeg
• 2 large pinches ground cloves
• 2 tins chopped tomatoes
• 2 tablespoons concentrated tomato puree
• 1 teaspoon of chili or sambal
• 2 tablespoons soy sauce
• 240ml treacle or molasses

• 120ml cider vinegar

1. Soak the beans overnight in cold water.

2. The next day, cook the beans according to instructions on the packet (how long you boil and simmer depends on the type). When cooked, drain the beans.

3. In the meantime, make the sauce. Fry the onions in the oil until golden. Add the garlic, cook briefly, then add the rest of the ingredients. Bring to the boil, then simmer for 20 minutes.

4. Mix the cooked beans and the sauce. Taste and adjust seasoning as required.

5. Pour the beans into an ovenproof dish. Cover and bake in the oven at 160°C (320°F) for 2-3 hours until the sauce is thick and the beans are soft. If the beans get too dry, top up the water.

Worth making? This is a complete flavour explosion, and utterly delicious. The basic recipe should appeal to most tastes, and you can tweak and adjust the spices to suit what you like. Definitely worth having a go at.

Mizuna Potato Salad

I was walking out the front door yesterday, and bumped into the lady who lives downstairs. She told me she had a glut of mizuna in the garden, and if I wanted some, I was welcome to it.

This is the same lady who had kindly offered me a selection of windfall pears last autumn. I had no idea what to do with those pears, but ended up with a lovely pear jelly. So I was not going to let the fact that I had no idea what mizuna was stand between me and an offer of free goodies. There is always something you can make with it, right? A few hours later, I found myself in her garden, scissors in hand, hacking away at the vegetable patch and avoiding some truly enormous insects that were hiding in there.

So…mizuna…what is it? A quick search on Google revealed it is Japanese and the name means “water greens”. It belongs to the brassica family, which was apparent from the fleshy stalks and sunny yellow flowers that topped the stalks. The flavour is hinted at by the alternative name of Japanese Mustard – it is a little like rocket, but the leaves I had were peppery with, indeed, a strong mustard taste, as well as a hearty “leafy” flavour. As you can see below, they also look rather attractive – young leaves are long, slim and elegant, and mature to large, serrated leaves with a purple tinge.

I started to look for some recipes to use up my haul, and quickly discovered that most recipes that call for mizuna seem to require the young stems, when the leaves are soft, feathery and tender. At this stage, they look like rocket leaves, and go well in salads and as a peppery garnish. However, the stems that I came to possess looked quite different. How come? Well, this is  bunch of mizuna that has enjoyed a mild British winter, then a brief burst of sunshine in March, before being soaked for about two months, and then getting a little more warmth in the last week. As such, it is less “soft, feathery and tender” and more like a triffid sitting out in the back garden, growing at an alarming rate.

So basically, I didn’t have the baby leaves, I had the grown-up plant, and this means the leaves are a little more “robust” in terms of flavour, making them better suited to cooked dishes. With this in mind, I came up with two recipes. One is the subject of today’s post, and you’ll just have to trust me on the other, and the fact that it was delicious.

This recipe is a simple German-style potato salad, with a little shredded mizuna added to the still-warm mixture and then letting it cool. While the mustard-like flavour of the mizuna leaves is strong, possibly even too strong on its own, it mellows with soft new potatoes and olive oil. I did not add any mustard to the sauce, so as you bite into the potatoes, the mizuna leaves add a little bite and piquancy. All in all, a very tasty way to use up these leaves.

Now, in case you are wondering what else I made with my robust and fiery-tasting leaves, they went into a mizuna and tofu stir-fry with a black-bean and chilli sauce. Peppery, spicy, hot and delicious!

To make mizuna potato salad:

• 750g new potatoes
• 40g (two handfuls) mizuna leaves
• 2 shallots or 1/2 small red onion
• 2 tablespoons vinegar
• 6 tablespoons oil
• 1 teaspoon salt
• 1 teaspoons ground pepper
• pinch of sugar

Put the potatoes into a saucepan, cover with water and bring to the boil. Simmer for around 15 minutes, until tender. Drain and leave to cool slightly.

In the meantime, peel and finely chop the shallots. Wash and shred the mizuna leaves.

Now prepare the dressing – put the vinegar, oil, salt, pepper and sugar into a jam jar, and shake vigorously until you have a smooth sauce. Taste and adjust seasoning if needed.

Cut the still-warm potatoes into chunks and put into a salad bowl. Add the shallots, mizuna and dressing, and toss gently. Serve while still warm, or allow to cool.

Worth making? This is a simple but tasty recipe and is a great way to use up greens that might otherwise to too strong to eat in a salad.

…or mushroom salad, if – like me – your knowledge of Finnish is less than fluent…

This was a little dish that I came across as a part of the Most Amazing Organic Breakfast at the Klaus K hotel when I was in Helsinki last summer for a wedding. It was hidden in amongst the breakfast goodies, and at first, it did not look all that dramatic. In terms of appearance, it was clearly overshadowed by bright orange buckthorn and vivid purple blueberry juices, cakes, cheeses, rolls and similar, but I’m a mushroom lover, and decided to take a little of it, just to try.

I must admit, this was with a slight twinge of reluctance, for their version was rather finely hacked, and a couple of us were looking at it for a while to work out whether it really was mushroom salad, or some disguised tuna mayo to catch out unwary visitors. Luckily, it was tuna-free, and it was delicious. So delicious. Utterly delicious! I kept going back for more, and by day three, I was piling the breakfast plate high with the stuff.

Given how good it tastes, this really is a rather simple recipe – sliced mushrooms, mixed with a savoury cream sauce. The only “trick” is that the mushrooms are boiled for a minute or two after slicing, so they take on a texture which is not quite raw, but they’re not as tough as they can been when they’ve been cooked for ages. They keep a little bite, but they are not too fragile. However, if you prefer your mushrooms fresh, I don’t see any reason why you couldn’t skip the cooking step and go raw.

I was pretty confident that I could work out a recipe for this salad myself – surely I just had to work out how to combine mushrooms, cream, salt, pepper and some chives. Well, I was more or less right on that. However, I checked a few sources, and was being recommended some horrific levels of salt. Two teaspoons to three tablespoons of cream! My brain was yelling to me that this was clearly far, far, far too much, so I decided to follow the method (cook the mushrooms in water with a squeeze of lemon juice, then make the sauce), but let myself be guided by by own sense of taste – just a little salt in the sauce, and then round it out with a dash of sugar and some freshly ground black pepper. This is also a good rule of thumb when you see a recipe, either in a book or online – read it, and think about it – does it work? Does it have everything you’re expecting? If someone promises the lightest, fluffiest cake but there is nothing in the method or the ingredients list to provide the necessary va-va-voom for lift off, are you really going to follow it blindly? Exactly!

With the mushrooms done and the sauce mixed to my taste, I combined the lot, and the flavour was almost perfectly as I remembered it. Substantial, earthy and intensely savoury. It reminded me a little of walking in the forest on a damp day – which is, in itself, a rather Nordic thing to do. But something wasn’t quite there. Then I remembered that I had not added any onion – it just needed a tablespoon of very finely shredded onion. I added it, and that did the trick – it just added that tiny extra tangy touch to finish off the dish.

So there you have it – a light, simply Finnish mushroom salad that you can enjoy when spring and summer finally get here, and a nice savoury contrast to the sweet Nordic goodies I’ve looked at recently (creamy semlor buns and cinnamon rolls). There has been a lot written of late about how this year we’re going to see Scandinavian and Nordic food become more popular, and frankly, it’s about time too! There are some real culinary gems in there waiting to be discovered. Think of dinner outside on a warm evening when the sun hardly sets…and given I am writing this as I see pouring rain and trails of water flowing down the glass, that cannot come soon enough for me!

To make sienisalaatti:

• 300g mushrooms (12 large-ish button mushrooms)
• Squeeze of lemon juice
• 3-4 tablespoons double cream
• 1/2 teaspoon salt
• pinch of sugar
• 1/2 teaspoon freshly ground pepper
• 1 tablespoon finely chopped onion or spring onion
• fresh chives, chopped, to serve

Wash the mushrooms and slice finely. Bring a pan of water to the boil, add a squeeze of lemon juice, then boil the mushrooms for 2 minutes. Drain and pat the mushrooms dry with some paper towel.

While the mushrooms are cooling, make the sauce – combine the cream, salt, sugar, pepper and onion. If too thick, add a dash of water. Taste and adjust the seasoning as required, the mix with the mushrooms. Just before serving, put into a bowl and sprinkle with chopped fresh chives.

Worth making? The only thing that is annoying with this reicpe is just how long I waited before making it. The flavour is absolutely delicious, the method is very easy, and it makes for a wonderful addition to dinner as a side dish, or as part of a breakfast spread. Highly recommended.
