Scottish Food: Perkins for Burns Night

I was having a look back at some past posts and I realised that it has been 4 years since I last did a Scottish recipe in honour of Burns Night. I did manage 2 years ago to make some lamingtons for Australia Day, so it’s not been a complete failure, but I did think that it was time to have another go.

So what should I make? I was doing a bit of research and I chanced upon a recipe for perkins, traditional spiced Scottish biscuits made with oats. Super! I could make those! Except I had no clue what they were. I must say, it was an odd feeling to be researching something from my home country, but yes, it turns out there are Scottish biscuits that I have no idea existed. And it seems that I’m not the only one – Amy at Baking with Granny seems to have had a similar reaction to perkins as they were suggested to her via Facebook.


I started looking for some ideas of what they were, and after wading through dozens of websites referring to perkins recipes “like granny used to make” and telling me they were “excellent with a cup of tea” it became apparent fairly quickly that I probably do know what they are, I just don’t know them as perkins. They’re flat, slightly chewy cookies made with oats, syrup and spices – not dissimilar to Anzac biscuits. I guess I would call them “oat biscuits” or “oat crumbles”. Anyway, there are some suggestions that they are linked to the famous Yorkshire parkin which shares many of same ingredients, but I’m sure there are the spirits of many proud Yorkshire housewives ready to haunt my nightmares for suggesting that parkin could have come from anywhere other than God’s Own County. So I’ll just say “those ingredients lists and similar names are such a coincidence”. In fact, beyond the oats, spice and golden syrup, I don’t think they are that similar. I think parkin should contain treacle, which these definitely do not.

As for a recipe, I found on on the website of the National Trust for Scotland. Bingo! Surely if anyone knows about traditional biscuits, it will be these people? I mean, a day out to a castle or a stately home always involves a visit to the tea shop and some cake or biscuits. So, dead cert?

Well…I started to read the recipe and there were a few gaps. It needs “flour” which I assumed would be plain, since there is baking soda in there to leaven them. Then “oatmeal” but what was that? Fine oat flour? Coarse? Oat flakes? Big ones? Small ones? I just improvised – I took jumbo rolled oats, ground them in a food processor so they were about half flour and half chopped oats and reasoned that a bit of texture in a biscuit isn’t a bad thing. I was pleased that they did measure out the golden syrup by weight rather than volume, which in my opinion is the right way to do it. By the time you’re measured 100ml of syrup, you’ve usually coated about 5 utensils with sugar and it is a mess. The size of the egg is also not clear – I went with medium and hoped for the best, thinking that if it was too dry I could always add some milk, but if the mixture gets too sticky, it’s always a pain to add more flour as it can throw off the quantities. Thus, the recipe you see below uses the Trust’s quantities, but is based on my tweaks to ensure it would actually works. I also had to double the number of almonds – the recipe asks for split blanched almonds, which I’ve never seen on sale. By the time I had skinned some almonds, I lacked the will to split them apart with a sharp knife, so I just used them whole.


But the recipe wasn’t the strange part. I was not entirely convinced the picture they used was of the actual recipe they were presenting. Their biscuits looked too big, too smooth, too pale. Mine – and those made by quite a few others, including Baking with Granny – are flatter, rougher and with a deeper golden colour. If I’m making something I don’t mind that it doesn’t look exactly the same, but I’d like some sort of family resemblance as a minimum! Let’s just say there is a Russian website with gingerbread cookies that look awfully, awfully similar.

Making them was actually very easy – throw it in a bowl, and get mixing. Because they are leavened with baking soda, you also get a bit of chemical magic during baking, which gives that amazing golden colour. They go in as fairly pale balls of dough, and during baking they sort of puff up and then collapse. If you look at them about half-way, they look very pale and are only just starting to colour. However the baking soda will work its spell on them and a few minutes later they get a crinkled texture and take on a deep golden colour. So watch them like a hawk, of if you’re feeling very Scottish, like a golden eagle. I actually did a test run with the first cookie to see how it worked and how long it had to be in the oven. I’d rather get one wrong and save a batch than try baking 20 and ruin the lot. How you approach it depends on whether you’re a gambler.

For all that, how do they taste? They’re actually delicious – the oats mean they are substantial, and they have a lovely deep flavour from the syrup and spices. It’s the sort of biscuit that might also be improved massively by the addition of a layer of chocolate if you’re in the mood to start messing around with a thermometer to get that glossy, shiny finish, but all that Scottish restraint perhaps points to keeping them pure. I’ll definitely make them again, and the chocolate option is rather appealing. Views?

To make Perkins (make around 45):

• 250g rolled oats
• 250g plain flour
• 180g caster sugar
• 1½ teaspoon baking soda
• 1 teaspoon mixed spice
• 1 teaspoon ground ginger
• 1 teaspoon ground cinnamon
• 125g butter
• 1 medium egg, beaten
• 180g golden syrup (*)
• 60g whole almonds, blanched (**)

1. Preheat the oven to 160C (320°F). Line two baking sheets with greaseproof paper.

2. Put the oats in a food processor. Grind until medium-fine – about 2 minutes. Half should be flour, the rest should be chopped oats.

3. In a bowl, combine the oats, flour, sugar, baking soda and spices. Mix well, then sieve to ensure there are no lumps. You’ll have some oats left in the sieve – tip those into the bowl.

4. Add the butter, and work with your hands until it is incorporated. The mixture will seem quite dry – you don’t get a “breadcrumb” texture.

5. Add the egg and the syrup, then use your hands to mix to a firm dough. You should be able to take pieces and roll them into balls – if too dry, add a little milk. If too wet, add more flour.

6. Take pieces of dough “the size of a large marble” according to the National Trust for Scotland (or weigh them – 20g – they’re about the size of a Fererro Rocher, Mr Ambassador). Roll them into a ball, and place on the baking sheet. Press down very slightly, then gently press an almond on top. It should still be more or less a ball, not flat.

7. Bake for around 13-15 minutes, turning half-way to get an even bake. They are ready when they are an even, rich brown colour. Remove from the oven, allow to cool for a moment to firm up, then transfer to a wire rack to cool completely.

(*) That’s golden syrup, not corn syrup. You need this for flavour. As a substitute you could use honey or the Swedish-style “light syrup” which has a similar consistency and flavour. Maple syrup is not great here as it is much runnier so you will need to adjust the amounts…

(**) Either buy almonds that have been blanched, or do this at home – bring a pan of water to the boil, add the nuts and simmer for a minute. Drain, allow to cool for a moment, then the skins should slip off when you squeeze them gently.

Scottish Food: Skirlie

Burns Night might have passed, but I’ve got one last Scottish recipe that I would like to share. This one is great, as it is both incredibly tasty, very simple to make and really rather healthy given that the main ingredients is the wonderfood that is oats.

This dish is called skirlie, and I’ve been making it rather a lot recently. You can more or less make it from cupboard and fridge staples, and the taste is definitely a lot more than the sum of its parts.

Skirlie is made from onions that have been browned in butter or olive oil, and then you add some pinhead oatmeal and leave the lot to cook until the oats are slightly toasted. Season to taste. Voila! If you’re trying to imagine the taste, it is something like an onion stuffing (or at least, how a vegetarian might imagine stuffing to taste…). If you’re wondering what pinhead oatmeal is, it is the stuff that looks like little grains of oats, rather than the big, fat flakes. I don’t think there is any reason you could not use rolled oats, but don’t try to use oatmeal or oat flour, as they are too fine.

I’ve tried to find out more about skirlie, but this seems to be one of those traditional Scottish dishes that doesn’t really have a lot to say for itself. No links to the Jacobites, no links to Robert the Bruce, and not (as far as I’ve seen) a favourite of Queen Victoria during her visits to Balmoral. This just seems to be a good, honest, traditional recipe, and that’s that! If you’ve got any secret knowledge, please do share! What I was able to find out is that skirlie is traditionally made with beef dripping as the fat to brown the onions, so if that’s your thing, you might want to have a go for a more “authentic” flavour. I think butter works well instead, but of course you can go for a completely vegan option by using olive oil.

This really does have the flavour of a very traditional dish, but for its simplicity, it really packs a flavour punch. To make this well, I think there are a few secrets: first, get the onions really cook down slowly until they are nicely browned, which can mean taking the time to get them cook for as long as you can on a very gentle heat. Next, let the oatmeal cook for quite a while, so that you develop some “nuttiness” in there. Finally, get a little creative with the flavours. You’ll need to add some salt, but this also benefits from some black pepper and aromatic herbs. One version I’ve seen uses generous amounts of fresh thyme and lemon zest, which makes this into a very aromatic, fresh-tasting dish.

There is, however, one way in which my version of skirlie really veers away from more traditional recipes. All the versions I was able to find told me to add the oats to the onions, and cook the lot, job done. However, I tried this and found the resulting skirlie to be a bit too dry for my liking. This would be fine if you’re serving it alongside something with a lot of sauce, or plan to mix it into mashed potato for some added flavour and crunch, but on its own, I was not convinced. The answer was simple – just add some water at the end of the cooking time, then keep cooking. It will initially boil up and thicken, looking a bit like porridge (at which point you think “oh no, porridge for dinner!”), but keep cooking and it will dry out a bit, but it will turn fluffy and the oats will be slightly tender. The end result is something with a texture a bit like brown rice.

To serve this, I think it really is best as a side dish, to provide a bit of variety from rice or mashed potato (or as I say – mix it into the potato!). You can also add other vegetables, such as mashed carrot or swede, or even some pan-fried spinach or kale for a properly healthy dish. Yes, it contains butter, but all those oats have to be doing you some good!

To make Skirlie (serves 4 as a side disk):

• 2 large onions or 6 shallots
• 40g butter
• 3 tablespoons olive oil
• 150g pinhead oatmeal
• 1 lemon, zest only
• aromatic herbs (thyme works well here)
• salt
• freshly ground black pepper
• water

1. Peel the onions/shallots, and roughly chop. As the oats are fairly fine, you want the onions to add some texture.

2. Put the butter and olive oil in a frying pan. Heat until the butter melts, then add the onions/shallots and fry over a medium heat until they have a good brown colour.

3. Add the pinhead oatmeal and lemon zest, plus herbs, salt and pepper to taste. Cook for around 5 minutes, stirring frequently – the oats should start to brown, but should not burn!

4. Optional. Add some water to the mixture – it will thicken initially, but keep cooking until it starts to look try. Try the oatmeal – if you prefer it to be softer, add more water and keep cooking until you get the desired consistency.

Bonfire Night Flapjacks

If you’re planning to go to a Bonfire Night celebration, then chances are you’ll be looking for something to munch on as you’re looking skywards to take in the fireworks.

With this in mind, I’ve played around with my go-to flapjack recipe to make it a bit more seasonal. In addition to the usual butter, sugar and oats, I’ve also added some spices as well as a rather random selection of things from the store cupboard – pumpkin and sunflower seeds, apricots, dates, sultanas, hazelnuts and spelt flakes. The result is sticky, delicious and has a very autumnal flavour. It also takes about ten minutes to make, so it is incredibly easy to whip up in a hurry. Just to make the point, I’ve got the recipe below – and you’ll see that all the “extras” are measured either by the teaspoon or by the handful.

If you’re keen to have a go yourself, you really don’t need much more than sugar, butter and rolled oats. Otherwise, just add whatever you want (or more realistically – whatever you have in the cupboard). Dried fruits work very well, as do nuts and seeds. The one unusual thin on the list is spelt flakes – I love using these in flapjacks as they stay very crisp and add some interesting texture. It’s actually taken me a while to track them down – I used to be able to buy then in a shop in Stoke Newington, but have not found them in Clapham. Lucky for me I stumbled upon a new Wholefoods store near Piccadilly Circus, so I’ve now got easy access to all manner of weird and wonderful ingredients. Result!

So there you have it – a quick and fairly healthy idea for Bonfire Night, or just to enjoy during a quiet moment with a cup of tea.

To make Bonfire Night Flapjacks (makes 16):

• 175g butter
• 175g soft brown sugar
• 40g (2 tbsp) golden syrup
• pinch of salt
• 200g rolled oats
• 45g (3 handfuls) sultanas
• 35g (3 teaspoons) candied ginger
• 20g (2 handfuls) pumpkin seeds
• 15g (1 handful) sunflower seeds
• 20g (2 handfuls) spelt flakes
• 40g (1 handful) apricots, chopped
• 25g (1 handful) hazelnuts, chopped
• 25g (1 handful) dates, chopped
• 1/4 teaspoon ground cinnamon
• 1/4 teaspoon ground allspice
• 1/4 teaspoon ground ginger

1. Pre-heat the oven to 190°C (375°F). Line a 20cm (8 inch) square baking tray or cake tin with non-stick paper.

2. Put the butter, sugar, syrup and salt (if using) in a pan. Heat gently until the butter is melted, and then boil for one minute. Add the candied ginger and mix well.

3. In a large bowl, mix all the other ingredients. Add the butter/sugar mixture and stir well. Put into a tray, spread the mixture evenly, press down and bake for 20 minutes. It should have a rich brown colour when done.

4. Once the mega-flapjack is cooked, let it cool completely, then turn onto a chopping board and cut into pieces.

Scottish food: Cranachan

You know that Scotland is famous for whisky (spelled without the “e”), tablet, shortbread and smoked salmon. What you might not know is that it is also a very prolific producer of soft fruit. And in my view, the jewel in the crown among them is the raspberry. Let’s just pause for a moment to admire one of the little fellows:

If you are from certain parts of Scotland and of a certain age, there is a pretty good chance that you spent many a summer “at the berries” (i.e. being given little choice in the matter of going to a farm to pick raspberries). There is perhaps a certain romanticism attached to spending long, warm summer days in fields of fruit….

That’s more or less how I remember it, but that’s probably the rose-tinted view. I suspect the reality was more like standing at the muddy farm gates at 7am, and then spending most of the day rummaging around in bushes that are covered in lots and lots of little spikes, encountering lots of creepy-crawlies. At the end of the day, your hands would be stained red and, thanks to those tiny barbs, could be really quite itchy. But when you’re young, it seems that you have hit on a way of earning more money than you could possibly ever imagine. And that’s how I earned my first £100! I can still remember the sense of achievement that I had earned a three-figure sum! To this day, it serves as a reference point for the value of money – it was hours of physical work to earn it, and it made me a little more selective about how I spent it.

Anyway, moving past the misty-eyed recollections of summers past, with this abundance of lovely raspberries in Scotland, there are two tasty things you could make. Most obviously, you could make raspberry jam, which is peerless when enjoyed on fresh scones. If you want to make it, just put equal weights of raspberries and white sugar in a pot with a squeeze of lemon juice – bring to the boil, then simmer until set.

The less obvious thing to make is….to make a classic Scottish dessert called cranachan (complete with that harsh “ch” sound in the middle). If you’re looking for a reference point, you could call this a Scottish trifle, made with cream, oats and raspberries. Yes, oats. Trust me on this.

I’ve actually been hoping to post a cranachan recipe for a while, but I felt I should wait until I actually got my hands on some Scottish rasps. Not that there is anything wrong with the berries that come from Kent or Hampshire, but I just prefer the Scottish ones! However, my timing is less than perfect. I missed the main season what with moving house and the 2012 Games, and we’ve now slipped out of raspberry season here in the UK. However, I realise that there are parts of the world where these little fellows are just coming into season, so I reasoned that there would always be a good time to do this recipe. That, and by pure chance, I finally managed to get my hands on what must be the last punnets of fruit that came out of Scotland this year. It was a sign, clearly, that I had to feature cranachan!

This dessert is very simple – a combination of crushed raspberries, toasted oats, lightly whipped cream, heather honey and a dash of whisky. If you’ve made sure that the cream comes from happy cows that have been enjoying the lush green pastures of Aberdeenshire (or similar) then you’ve got a 100% Scottish dessert. It combines the sweet tartness of raspberries, nutty toasted oats that have a little bit of crunch to them, and lightly whipped cream that is flavoured with whisky and honey. Even with the oats, it’s a very luxurious dessert.

There are many different ways to make cranachan, and as I am not really in a position to say which is the authentic version, I’ll give you a few options and you can pick which you prefer. Some people throw everything in a bowl and mix,  others like to have distinct layers of cream, fruit, honey and oats. I prefer the “layers” approach and like to put it together at the last minute – the different textures make this a more interesting dessert. Also think about how long you will let the dessert sit – the longer you leave it to sit, the softer the oats will get and the stiffer the cream gets. I would assemble the dessert just before serving, so you can still appreciate the different textures.

And finally, I will deal with the obvious question – can you use yoghurt in place of the cream? I think you could, and while it won’t be the same, it will still be tasty. Just don’t try to play too fast and loose with the recipe by getting rid of the oats. Now that would be sacrilege!

To make Cranachan (serves 4):

• 60g oats (pinhead or jumbo rolled)(*)
• 300g fresh raspberries, plus more to decorate

• 300ml double cream
• 6 tablespoons honey, melted and cooled
• 6 tablespoons whisky

1. Dry-toast the oats in a frying pan over a medium heat. They are ready when the flakes are just browned and smell toasted, but should not be dark. Leave to cool.

2. In a bowl, lightly crush half the raspberries. Fold in the remaining whole raspberries and crush lightly – there should still be large whole pieces.

3. In another bowl, mix 3 tablespoons of honey with 3 tablespoons of whisky.

4. In another bowl, mix the cream and the rest of the honey and whisky. Whip until the cream thickens but is still soft. It should still be floppy, not stiff.

5. To assemble the dessert(**), add some of the raspberry mixture, then a sprinkling of oats and then some of the cream mixture. Add two more layers in the same order (raspberries, oats, cream, raspberries, oats, cream). Top with a few whole raspberries, and drizzle with the honey-whisky mixture. Serve immediately.

(*) Use as little or as much of the toasted oats as you prefer – you might want to go easy on the oats unless you’re a hardcore porridge fan.

(**) If you’re making this for a dinner, I recommend toasting the oats, making the whisky/honey mixture and toasting the oats ahead of time, but assemble everything at the very last moment. It’s also best not to keep the raspberries in the fridge, as they have a better flavour at room temperature.

Get Oaty!

You may or may not have appreciated from past posts that I’m Scottish (see here, here, here and here). Our cuisine is, in many ways, quite curious. On the one hand, you have fantastic products like wild salmon and fabulous fresh fruit (like these), but it’s also a nation famed for the deep-fried Mars bar. Contradictions. We love our sweet things (tablet and macaroon bars) but we also love our porridge.

In fact, I think this last comparison is one of the most contrary of all – tablet is about the sweetest things you can imagine, whereas porridge is just about one of the healthiest things you can eat – low GI, higher protein than other grains, low-fat and plenty of fibre. That, and it’s quick, easy and tasty.

I have always been a porridge fan, and it’s the perfect way to start the day when it’s nippy outside. This week we’ve been hit by a cold snap, so I’m grateful for a warming bowl of the stuff before I venture out onto the frozen pavements of Olde London Towne. But last week, I went along to a very intriguing evening, where the world of oats would be lovingly folded into the world of chocolate, thanks to Rude Heath and Demarquette Fine Chocolates.

The evening kicked off with a few wise words about all things oaty and porridgy from Nick Barnard from Rude Health. I would go so far as to say that what this man does not know about oats can be safely assumed to be not worth knowing. How serious is he? Well, he regaled us with tales of his participation in the World Porridge Championships in Carrbridge near Inverness, where he competed against a collection of “gnarly Scots” for the coveted Golden Spurtle. There were two parts to the competition – a “classic” round where participants made porridge from oats, water and salt, and a “creative” section where all manner of fantasy and whimsy could be deployed, provided that the results included porridge.

Now, first things first…if you’re wondering, a spurtle is a special implement (basically, a stick) used to stir porridge. Some people swear by it. I’m inclined to the view that it’s probably one of the silliest things that you could use to make porridge, and you’re far better off using a normal wooden spoon.

We started off with the “classic” version – porridge made from a mixture of course and medium oats, made with milk and water with a dash of salt. Having been identified as a Scot, I was asked what sort of oats I used. I told him I went for pinhead oatmeal, and I think that earned me some serious brownie points – for it seems this is the really hardcore stuff for, eh, gnarly Scots like me…

Now, I should confess that by this stage, having walked all the way from South Kensington tube station in the cold, we had been warmed up with a cup of hot chocolate made with oat milk, whipped cream and whisky (which was delicious, by the way). We’d also been able to nibble on a selection of chocolates and caramels. So by the time Nick had made his porridge, it’s fair to say that the version hearty, savoury porridge was actually rather welcome.

We were also offered some sugar, honey or cream to top it off. As a gnarly Scot, I stood there, skulking, and ate it unadorned…and I’ll let you muse on the idea of me standing in a shop, full of luscious chocolates, eating porridge…

Once we’d sampled the classic version (and I was shocked to see that not everyone devoured their bowl), it was time to see the “creative” section. Now, this was pure fantasy, combining decadence with Dalí: a dark chocolate cup, filled with warm porridge and salted caramel. The trick is that the filling is warm rather than hot, so that everything combines and melts slowly, such that the cup slowly collapses into sticky deliciousness. Think of those melting watches, but tastier.

As Nick made more porridge with an admirable focus of purpose, the resident master chocolatier Marc Demarquette got to work on the salted caramel sauce. In true Blue Peter fashion, everything was laid out ready for work!

I’ve made salted caramel before, but I have to admit that it tends to be a bit of a hit-or-miss affair, and it has, in the past, taken more than one attempt to yield the desired result. Helpfully, Marc shared some tricks of the trade with us, and mercifully for me, in clear and simple terms that I could understand!

Firstly, how to make the base caramel? It’s sugar with a dash of water, heated until lightly golden (too dark and it gets bitter) and you’re looking for “champagne bubbles” – that is to say, the small-ish bubbles you have once the initial larger bubbles subside. Next, adding the butter – the trick here to have it at room temperature, not straight from the fridge, and then drop it into the caramel and then let it sit without stirring. The butter melts, and then you are stirring hot melted butter into the caramelised sugar, which should help to stop things from seizing up. Then move onto adding the cream and salt (or, in this case Halen Môn vanilla salt) and you end up with a lovely, smooth, sticky salted caramel…

…then you fill the chocolate cups with a little porridge (or as the French probably call it to seem fancy – crème d’avoine) and top with a generous amount of salted caramel. As you can see, this causes the Dalí-like slow melting of the cup. Just lovely!

As the cup melts, you get to enjoy all three flavours together. All in all, a fun and very different little dessert. I’m pretty sure that chocolate and salted caramel have never been enjoyed in such a healthy way!

Now, a little damper on all this excitement – Nick told us a sorry tale. He’d fought the good fight last year to win the Golden Spurtle, but he was pipped at the post. Having just tasted this fantastic little dish, I was stunned. However, Nick assured us all that he’s going to have another go – and we all wish him good luck!

I know, after all that porridge and caramel (not forgetting the hot chocolate) I should have been full, but they were so tempting.

These little domed chocolates are a range of caramels with exciting flavours like winter berries, festive cinnamon and apple, Scottish raspberry and Cornish sea salt caramels. We also got to try the Medina chocolate, an award winner based on a whipped ganache filling. Given that this was the server’s first day in the boutique, we all think she did pretty well in guiding us through the display and served those chocolates with great aplomb!

Atholl Brose for a Happy Hogmanay!

That’s it! 2011 is coming to a close, measured now not in weeks or days, but hours and minutes.

The excesses of Christmas are over, now replaced with plans for more excess on New Year’s Eve. This year I have the good fortune to have been invited to friends, so no need for me to do much other than pitch up on time and with a few drinks.

I’ve got champagne for sure, but I’ve also got a few fun things to take along. The sloe gin is ready, and I have discovered that it lends itself very well to what has been christened the Sloe Gin Fizz Royale – a dash of sloe gin in the bottom of the glass, and top up with quality sparkling wine (forgive me for being a snob…but I prefer champagne straight up!). It works perfectly as a apéritif.

The other trick up the sleeve is a nod to the very Scottish nature of New Year’s Eve. Try calling it that in Edinburgh’s Royal Mile of Glasgow’s George Square. You might just be met with icy stares, but chances are a local will put their arm around you and explain that “we dinnae call it that here – it’s Hogmanay, laddie!”.

Hogmanay is a big thing in Scotland. There are lots of fireworks, lots of drinking, lots of singing Auld Lang Syne. And the festivities go on to such an extent that the delicate Scottish people need not just one holiday – 2 January is also a public holiday north of the Border, and to this day, I still find the idea of going back to work on 2 January to be something of a liberty.

So, in honour of this very Scottish night, the mystery drink I am making is…Atholl Brose!

Just a wee word of warning – don’t dare call this a cocktail. It has an ancient pedigree (stories claim it originates back in the late 1400s) so those 1920s gin joint pretenders are but mere latecomers to the party.

It you like this, you’ll be in royal company – it is said to have been a favourite tipple of Queen Victoria when she encountered it on one her visits to Scotland. It’s a mixture of oat milk, whisky, cream and honey. Now really…could a drink actually use any more typically Scottish ingredients?

The process for making Atholl Brose is quite easy, and the great thing is that it can be made ahead of time – indeed, many sources recommend making it several days ahead of time and allowing it to sit. However, I’ve come up with a version that can be made a few hours before, and so still have enough time to whip up a batch before the magic hour.

You start with soaking oats in water, then mashing and straining them to make an oat “brose” or broth – something like an oat milk. You could just cheat and buy oat milk if you’re in a hurry, but many Scottish matrons would be aghast at this idea…

Now…the whisky. Note the spelling, and more specifically, lack of an “e” in there. Scots don’t use the “e” and everyone else does. Yes, there are battles about who came up with it, who produces the best whisky/whiskey and how it should be spelled, but let’s just call a truce and say different people produce different drinks, and everyone has their own preferences. But regardless of whether you are using whisky, whiskey or bourbon, I would recommend a decent-ish drink, but not the fine rare malt that someone else was given as a Christmas present. The delicate flavours and aromas can get lost in the cream, oats and honey – the fine drinks should be enjoyed just as they are.

The honey, in my view, should be heather honey. It is a rich, thick honey with lots of flavour rather than just providing sweetness. However, I leave the choice completely up to you as the mixologist, but just be careful not to use something that has an overly-strong flavour (such as chestnut or thyme). These types of honey are lovely, but can overpower everything else.

The traditional ratios when making Atholl Brose are 7-7-5-1 (oat milk, whisky, cream, honey), and then these should be stirred with a silver spoon (if such a things is available). However, I’ve found that using a cocktail shaker or large jar gets a good result, but it’s still nice to pour out and stir each with a small silver teaspoon, more for drama than necessity. But it’s Hogmanay, and it’s all about show!

Once you’d added all this, plus single cream, you get a drink that is a little like Bailey’s, but in my view with more interesting flavours, one which is stronger and also lighter. It’s unusual and rather more-ish.

To make Atholl Brose (serves 8):

Step 1: the oat milk

• 1 cup oats (rolled, pinhead…your choice!)
• 2 cups lukewarm water

Mix the oats and the water. Leave to sit for at least 30 minutes (longer doesn’t hurt). Put into a blender, pulverise, then pass through a cheesecloth. Towards the end, squeeze to get a much liquid from the mixture as possible.

Step 2: making the Atholl Brose

• 7 parts oat milk
• 7 parts whisky
• 5 parts good single cream
• 1 part honey

Mix the honey with the oat milk. Put everything into a cocktail shaker or large jar. Shake until mixed. Taste the Brose, then adjust according to taste (more honey, more cream, more whisky…). Serve chilled or over ice.

Worth making? For sure! It’s a nice traditional Scottish drink and very well-suited as a post dinner drink on Hogmanay. It’s very easy, and it’s pretty much guaranteed that your guests have never had a drink made from raw oats before!

Scottish food: Oatcakes

Do you do superfoods? Every week, it seems like there is something that we should all be eating by the bucket-load to ensure we are all in tip-top-shape. Blueberries, spinach, grapefruit, pumpkin seeds, wheatgrass, cranberries, magic hocus-pocus desert cactus oil…OK, that last one is clearly made up, but I find it quite funny that we keep looking for the silver bullet to solve all our problems. If you haven’t worked it out by now, I am a great believer in “a little bit of what you fancy and everything in moderation” coupled with “eat what’s in season as that’s when it’s best“.

Making a not-very-logical link, what is behind this little rant? Well, I just read a piece on superfoods, and it just got me a bit wound up. Being told about this wonderful thing called “oats” as if they have just been brought forth from the Amazonian jungle. Meh. I’ve known about them for years. Many a winter morning has been kick-started with porridge. But I do agree that oats are pretty darn good – gluten-free (but make sure you buy from the right supplier!), low GI (so they release their energy slowly, so you have energy throughout the day), as well as the less sexy considerations that they leave you feeling full and are rich in fibre. That, and they are very Scottish. I like that!

Two of the most well-known uses for oats are intimately linked with Scottish cuisine – porridge and oatcakes. I realise that the former is very personal (some like porridge with milk and sugar, some make it with cream and add honey and condensed milk, others make it with water and a pinch of salt), so I will instead turn to oatcakes. I absolutely love them. Indeed, they are my snack of choice at work. I usually always have a packet or two stashed at the back of my filing cabinet in case I get peckish during the day. Some might think this is an attempt to show off and look virtuous, but I do happen to find them very tasty and incredibly more-ish, so really rather good for me that they are also healthy.

But how to make oatcakes? Easy? Worth the effort? Well, it is an absolute doddle. You just boil up water and butter, add salt, and pour into some ground oats. This makes a dough, then cut out the oatcakes. Bake, and you end up with a pretty stack of savoury biscuits a lot like this:

Commercial oatcakes are fine, but one of the best things about making oatcakes yourself is that they are very crisp, and have a lovely toasted nuttiness. That, and they are crisp without being too dry.

I find their texture works very well when you pair them with cheese – and in my case, that would be slivers of very tangy, mature cheddar. Perfect after dinner, as a snack, or to nibble on in the evening when watching a film. If you’re feeling fancy, you can even make very small oatcakes, and use as the basis for canapés for…eh…those glamourous parties that we are all throwing these days.

Just be warned – one you start making them, you might find it difficult to stop and switch back to store-bought!

To make oatcakes (makes 16):

• 175g medium oats(*)
• pinch of bicarbonate of soda
• scant 1/2 teaspoon salt
• 15g butter
• 75ml water

Preheat the oven to 160°C (320°F). Grease two baking trays with butter or non-stick spray.

Put the oats and bicarbonate of soda into a bowl and mix.

In a saucepan, heat the salt, butter and water. Bring to the boil, then pour into the oats. Mix to a soft dough using a spoon, then with your hands. The dough should be soft and hold together, but should not be sticky.

Sprinkle more oatmeal on a worktop, lay the dough on top, and roll out the dough to 2-3mm thickness. Use a round cutter (6cm diameter) to cut out the oatcakes, and transfer them to the baking sheets. Gather the scraps in a bowl, add a teaspoon of water if needed, and mix until you have a ball of dough. Use to cut out more oatcakes, and keep going until all the dough is used up.

Bake for 30 minutes until crisp and just lightly golden at the edges. Leave to cool on the baking tray. Store in an airtight container.

(*) Make sure you use medium oats. If they are fine oats, the dough will be too dry. And don’t use rolled oats, as the texture will be all wrong, and then the guests at your glamourous party expecting perfect canapés will be shocked, and we don’t want that…

Worth making? The oatcakes you can buy are nice, but these are much nicer! They have a more “toasted” taste and additional nuttiness, which goes extremely well with cheese after dinner. Definitely worth trying!

Breakfast Bars

The eagle-eyed among you will notice that I did a lot of posts in early summer, and but have been doing less of them in recent weeks. OK, there was nothing for two weeks because I managed to go to the bits of Europe that seem to be devoid of Internet access, but even so, I’ve been less active. All of this is because I started a new job, which I absolutely love. Everything’s great, but as I get busy, there are those odd days when I end up skipping breakfast.

So what to do? I thought about making breakfast bars, which I could pack with good things to eat on those mornings when I am too lazy to get up early enough for a proper breakfast.

These bars are a breeze to make. Just use juice, nut butter and apricots to make a thick paste, then throw in oats and flour, and then whatever bits and bobs you fancy. This could be dried fruit, nuts, seeds, spice and – gasp – chocolate chips. I went for apricots, sunflower seeds and pistachios. They look kind of funky with all the flecks of orange and green.

They also taste great. They are not particularly sweet, tasting more of oats with occasional bites of nut or apricot, but if you like a bit more sweetness, then you could easily add some honey or demerara sugar to the mixture before baking. And they are filling. I think these might just do the trick to start the day.

For 20-25 breakfast bars:

• 225g dried apricots, whole
• 170g nut butter (almond, cashew, hazelnut)
• 200ml fruit juice (I used orange)
• 225g rolled porridge oats
• 125g wholemeal flour
• 1/2 teaspoon baking soda
• 1 teaspoon baking powder
• 100g dried apricots, chopped
• 50g sunflower seeds
• 50g pistachios
• 2 tablespoons dried mixed citrus peel

Preheat the oven to 190°C, and grease a rectangular baking tray (I used 20 x 35cm).

Put the nut butter, whole apricots and fruit juice in a food processes and blitz until you have a smooth paste.

In a bowl, combine the apricot paste with all the other ingredients and mix well. Use a spoon, but hands will be easier.

Put the mixture into the baking tray and smooth out. Bake for 20-25 minutes until slightly golden.

When cooked, remove from the oven, allow to cool, then cut into bars.

Worth making? Very much yes. These are easy to make and can be endlessly changed depending on what you’ve got in the cupboard. They will also keep for a long time in an airtight container, so perfect for an early morning bite or healthy snack. If I make them again, I plan to add a little cinnamon and dried apples and sultanas. Yum!

Flapjacks

A quick post for a quick recipe. Still cold in London town (just less cold than last week) so I’ve been mixing up batches of flapjacks at the weekends. To keep things interesting, my most recent attempt benefited from the addition of a couple of handfuls of spelt flakes, some juicy sultanas and chopped apricots, and I replaced the plain old white sugar with muscovado. Great with a cuppa when you come in from the chill!

HOW TO MAKE IT

• 175g butter
• 175g sugar (any sort)
• 2 tablespoons of golden syrup
• pinch of salt
• 250g oats
• sultanas, seeds, nuts or dried fruit (optional)

Put the oven on at 190°C, and grease a 20cm baking tray or cake tin (ideally non-stick). Put the butter, sugar, syrup and salt (if using) in a pan. Heat gently until the butter is melted, and then boil for one minute. Add the oats (plus any “extras”) and stir well, then put into a tray, spread the mixture evenly, and bake for 20 minutes.

Once the mega-flapjack is cooked, let it cool completely, then turn onto a chopping board and cut into pieces.

WOULD I MAKE IT AGAIN?

Yes – in fact, I’ve made these twice again since I took the photographs. The spelt flakes were a great addition as they stay quite crisp and a some extra texture to the otherwise soft and chewy flapjack, and the muscovado added more depth of flavour. Now my creativity can run riot and I’ll see what nuts, dried fruit and seeds that I can find lurking at the back of the cupboard for next time…
