{9} Hallongrottor

I’ve made some rather elaborate things in the last couple of weeks, so today I’ve turned my hand to something easy. If you’re looking to amuse some small kitchen helpers with limited attention spans, then this might be one to try.

These little biscuits are called hallongrottor, a Swedish bake which means “raspberry cave”. I guess they are a type of thumbprint cookie, but with just about the cutest name possible. I realised that I’ve ticked off Norway, Denmark and Finland already this year, so it only seems fair to make something from Sweden.

Making these little guys is a complete breeze. You just need to work with some very soft butter, and whip it until it is super-soft. Add icing sugar and beat some more, then add your flavourings and beat some more. You could make this by hand with a whisk and lots of elbow grease, but your arms will thank you for using an electric beater. One for the Christmas list if you don’t already have one!

Finally, you work in the flour, then roll the dough into balls. To get them more or less the same size, I rolled this out on a worktop into a long sausage, then cut into equally sized pieces. How equal? I used my precision Japanese steel ruler. Every piece was two centimetres exactly. Sounds nerdy, but it will get you pretty good even sizes without the faff of weighing each piece.

To finish them off, you then roll them into balls, then make a dent for the jam. I tried various kitchen implements, but by far the easiest way was to bend my index finger, and poke the middle “bony bit” into the top. You may want to use clean hands for that part…and then just pop your jam of choice into the dent. I tried using a small teaspoon and it was a complete mess. Use a piping bag, and beat the jam until soft before trying to pipe it in. I didn’t do this at first, and so the nozzle of my piping bag got blocked, then lots squirted out when I squeezed hard, so be careful!

I actually made two versions of these – one using just plain flour, and one using a about one-fifth cornflour. It is definitely worth using the cornflour – the texture is lighter and more crumbly – so that’s the recipe I have included below.

To make Hallongrottor (makes 15)

• 100g butter
• 50g icing sugar
• 1/2 teaspoon baking powder
• 1/2 teaspoon vanilla extract
• 1/2 teaspoon ground cinnamon (optional)
• 100g plain flour
• 25g cornflour
• jam (I used seedless raspberry)

1. Preheat the oven to 180°C (355°F). Put 15 mini cupcake cases on a baking sheet.

2. Put the butter in a bowl and beat until very soft. Add the icing sugar, baking powder, vanilla and cinnamon, and beat well until fluffy. Add the flour and cornflour, and mix well. Put the bowl in the fridge for 10 minutes.

3. Remove the dough from the bowl, roll into a long sausage and cut into 15 pieces. I roll it out to 30 cm long, and cut into 2cm chunks – this gets roughly equal sizes.

4. Roll each piece into a ball, then put into a paper case. Make an indentation in the top, and fill with a little jam.

5. Bake for 10 minutes until golden, turning half way to get an even bake.

Just Jammin’

Yes, I’m finally back! Not quite 10 months since my last past, but that is still one looooong blogging hiatus. And it is all down to me trying to get to grips with parenthood. I’ve discovered that I’m better at this whole lark than I ever thought I would be. But what happened to my time? I somewhat naively imagined that I would have at least some time to indulge my hobbies in between trips to the playground, making wholesome baby food, and becoming an expert of the best children’s programming that Cbeebies has to offer. Well, that was just pie in the sky! In fact, I don’t think I’ve even managed to read a whole novel in the last six months. And no, reading That’s not my bunny/reindeer/cow/dinosaur twice each day doesn’t count.

That said, things are now finally getting back to something that looks a bit more like normal, even if I have had to completely accept that our lives have also changed completely and forever, and that we’re really adjusting to the “new normal”. This also means that I am sometimes able to get back into the kitchen and cook and bake for pleasure, rather than to meet the demands of a hungry little mouth who wants meatballs right now. Of course there is always the threat that a little someone will wake up, so I won’t be tackling projects that require a good four or five hours to complete, so that’s most of the Great British Bake-Off technical challenges off limits for the next couple of years. Hey ho…

Today I thought I would ease back in with something simple and delicious – some lovely raspberry jam that I recently made. It would be wonderful to tell you that the fruit was picked just moments before making the jam from a row of plants at the end of my garden, but I am not that fortunate. The garden revamp is on the cards for next year, and I will be putting in some fruit bushes and trees. In the meantime I did the next best thing for use city folk. We headed to a pick-our-own farm outside London (Crockford Bridge Farm if you’re keen to do the same). And yes, you’ve spotted that I combined fruit picking with a kid-friendly day out.

Luckily for us (if not the local children) most of the schools had gone back after the summer holiday when we got there, so we were able to enjoy bucolic scenes of fields and blue skies all to ourselves. We worked our way through plump blackberries, the last strawberries of summer, more courgettes than I’ve ever seen and rows of enticing ruby raspberries.

All of this took me back to childhood summers spent picking raspberries in rural Perthshire. And the irony was not lost on me that I was now paying for the privilege of picking fruit, rather than being paid to pick it!

But it was still a glorious day out, and our two little helpers even managed to resist eating more than one or two berries before we got them weighed and coughed up the cash. And the fact that my lad and his little friend fell fast asleep almost instantly on the way home thanks to all that fresh air? Priceless!

So once I was home with this fruit, I had to think about what I was going to do with it. Some got eaten straight away, but for most of the raspberries, they just had to go into some jam. I had been thinking about this all along, as I had made sure to include a few slightly under-ripe berries to get enough pectin in the jam to ensure a good set.

Raspberry jam is one of my absolute favourites. The flavour is sweet and tart, fruity and fragrant. It is also really so simple to make, so great for a preserving novice, and easy to get a good set without too much trouble. When you get into jams and marmalades, you will obsess about the setting point – is it ready? Do I need to boil it for longer? Did I make a mistake using normal sugar rather than jam sugar? But these are usually non-issues if you are using raspberries!

Some recipes suggest mashing up the fruit and letting it sit overnight, but I find that you don’t need to wait that long. Throw the fruit and sugar in a pan, mash it up and let it sit for 20 minutes or so. The sugar will start to dissolve in the fruit and draw out the juice. Then it is a simple case of bringing the lot to a boil, adding some lemon juice at the right moment, and that’s more or less it. Then in no time you can be enjoying colourful, fragrant and deliciously tart raspberry jam on scones, toast or even swirled through natural yoghurt.

To make raspberry jam (makes 3 x 450g jars)

• 750g raspberries
• 750g granulated white sugar
small knob of unsalted butter, size of a hazelnut (optional)
• juice of 1 lemon

1. Pick through the berries to make sure there is no spoiled fruit or insects lurking in there. Put the raspberries and sugar in a heavy saucepan. Roughly mash until the fruit and sugar are mixed, then cover and leave to sit for 20 minutes.

 2. Place the pan over a medium heat until it comes to a boil. Add the lemon juice and butter if using(*), and cook on a rolling boil for 5 minutes. After this, start to check for a set (**).

3. When you have a set, remove the jam from the heat and leave to sit for 10 minutes (it will thicken slightly – this helps to ensure the pips are evenly distributed in the jam and don’t sink). Decant the hot jam into sterilised jam jars(***), seal and leave to cool.

(*) Butter in jam? I find this helps to reduce the amount of scum that forms on top of the jam during cooking – and sometimes the scum will vanish completely when the jam is left to cool before being put into jars!

(**) How to check for a set? Use a thermometer and check the jam has reached 106°C (223°F). Or drop some jam on a chilled plate – allow to cool for a moment. Push with your finger – it should wrinkle. If you don’t get a wrinkle, boil the jam for 2 more minutes then test again. I actually do both tests – I use the electronic thermometer, then drop some jam on a plate, because this is what my mum did and I like doing it!

(***) How to sterilise jam jars? Wash in hot, soapy water, and then rinse very well – do not dry them. Now place up-side down on the shelf of a cold oven, and heat to 100°C / 210°F for 20 minutes. Remove from the oven using gloves, allow to cool slightly (they should still be warm) and fill with the hot jam. You can leave the jars in the oven with the heat turned off until you need them, as this keeps the glass warm, and warm glass is much less likely to crack when you add warm jam (science, eh?). Remember to sterilise the lids by washing in hot, soapy water, then rinsing well and then boiling them in a pot of hot water for a few minutes

{11} Almond Jam Cookies

You might have noticed that there has been a glut of almond-flavoured goodies this year, so why stop a good thing? This recipe is based on one I saw for “Italian almond cookies” in a book that suggested filling them with flaked almonds or nuts. However, I thought a nice tweak would be to make them with a jam filling, and to use what I had made during the summer and autumn. And, thankfully, this year I made a lot of jam!

I would love to be able to say that there was lots and lots of thought that went into the pairing of jams with these almond biscuits, with careful consideration of what would work with their nutty flavour, but the reality is that I just had a good old rummage around inside the store cupboard.

I ended up using six different types – plum, raspberry, apricot and pear jams, which were all delicious. However, the real stars of the show were Seville orange marmalade, with the bitter citrus acting as a good partner to the sweet, aromatic almond, and the surprising pink grapefruit marmalade, with that little sharp twist providing a nice counter to the sweetness of the biscuits. I also left shreds of orange and grapefruit peel peeking out over the sides.

All in all – I’ve very happy with how these turned out. The result was a very jaunty and colourful little selection…just in time for tomorrow’s New Year’s Eve dinner!

To make almond and jam cookies (makes around 30):

• 200g ground almonds
• 200g icing sugar
• 2 medium egg whites
• 1/2 teaspoon almond extract
• jam, marmalade or fruit paste (e.g. membrillo)
• icing sugar or flaked almonds, to roll

1. Put the almonds, icing sugar and almond extract in a bowl. Add half the egg white and mix. Add the rest of the egg white, a little at a time, until you have a smooth but fairly firm dough. If the mixture is too sticky, add an equal weight of almonds and sugar to sort it out. Wrap in cling film and chill for an hour or overnight.

2. Preheat the oven to 150°C (300°F), and line a baking tray with greaseproof paper rubbed with a dot of oil or butter.

3. Roll the dough into a sausage shape and cut into pieces (aim for around 25-30 pieces). If you are a bit obsessed, use a ruler to measure out equally-sized pieces!

4. Roll each piece into a ball, roll in icing sugar (or flaked almonds if you prefer) then place on the baking sheet and flatten slightly. Make an indent in the top and add a little jam or marmalade (be careful not to over-fill).

5. Bake the cookies for around 15 minutes until slightly puffed up and they have a golden colour.

Rødgrød med Fløde

Chances are you’re probably sitting there wondering what on Earth does that mean and how do I even begin to pronounce it?

Well, it is Danish, and a literal translation is “red groats with cream”. However, you can translate it more freely as the enticing-sounding Danish red berry pudding with cream. Something like this.

I say something like this as this is one of those recipes that looks oh-so-simple, but in reality, many people have their own version, and everyone thinks not only that theirs is best, but that theirs is the only way to make it. So for any Danes out there that happen to read this, I’m fully aware that you’ll be rolling your eyes, and possibly tutting, but I think this version tastes pretty decent, and at the end of the day, that’s what matters.

My first experience with the words rødgrød med fløde was actually way back in the late 1990s, when I was an exchange student in Germany. There were a couple of Danes in our group, and the communal view at the time was that it was a “robust” language to outsiders with a “unique” sound. The Danes thought it was hilarious to ask us to pronounce rødgrød med fløde, which we all got spectacularly wrong. I just could not force myself to make those sounds! All to do with the fact that Danes swallow a lot of the contestants at the end of words, so what you might think is something like roo-d groo-d med floo-hd is closer to rhye-gry-meh-floo-e. If you’re keen to find out, you can hear people getting it right here. Then try to copy them – see how hard it is?

But anyway, for all the humour of those words, I’ve never actually had the pleasure of trying rødgrød med fløde. So how do we make it? The starting point for any batch is lots and lots of delicious summer berries, ideally red. This is the sort of dessert that really is best made when fruit is at its most ripe and the peak of deliciousness! We’re not looking for fruit that looks perfect, it’s all about taste.

As I mentioned, there are lots and lots of versions of rødgrød med fløde out there, but at its most basic, this is recipe that calls for fruit juice that is lightly sweetened, and then thickened slightly with starch (potato flour or cornflour), then cooled and served with lashings of cream. Lashings of cream. However, even within what seems like a pretty easy recipe, there is lots of scope for variety.

Many people seem to cook the berries, then purée the lot by pushing it through a sieve. I have to admit that I’m not too keen on this approach – I like my fruit either totally smooth or in recognisable pieces. I’m just not too keen on anything that seems like mush or has lots of stringy “bits” bobbing around in it. At the other end of the scale, some recipes suggest cooking the fruit, but then straining the liquid through muslin to get a clear red juice (a bit like making jelly). This would apparently result in a clear ruby-red colour and velvet-smooth texture, but I thought it was wasteful as you would throw away a lot of the fruit (and all the fibre from those seeds!). Then other recipes took a more pragmatic approach – just boil up all the fruit, then thicken the lot. Easy, albeit with more of a thickened fruity mush.

However, there were a few suggestions that combined the second and third approaches – making some fruit into a juice, then adding more whole fruit to the juice just before adding the starch. This looked like the best option by far. I love how berries look like little jewels, so it would be a shame to lose that completely. So I cooked up some of my fruit to turn into juice – in fact, this approach was useful as I was using some rhubarb in my version, and I wanted that lovely tart flavour without the stringy “bits”. Once my fruit had cooked down, I put the lot into a muslin bag, but rather than just letting it drip to get a clear juice, I happily gave it a good old squeeze. Maximum fruit, minimum “bits”, and who really cares about the pudding being slightly cloudy? I then put the juice back into a pan, added some berries, and cooked the lot lightly before adding some cornflour to get a thickened texture. Remember you’re aiming for something like a pouring custard, not glue! The result was the colour of garnet or red damask – luxurious, sumptuous, intense.

In terms of the fruit I used, I looked to tradition. In Denmark, redcurrants (ribs) are very popular, and apparently some Danes grow redcurrant bushes just to make this dish. Next were some raspberries (hindbær) – in my view, no summer fruit selection is complete without them. This probably comes from summers when I was very young, spent picking rasps, several plastic punnets attached to a plastic string around my waist (allows for faster two-handed picking, important when you’re keen to earn your first ever £100 as soon as possible!). They also have the requisite glorious red colour you want for this dessert, but they are a complex fruit – sweet, yes, but also aromatic and also a little tart too.

Strawberries (jordbær) are also favourites, and rhubarb (rabarber) seems to feature quite a lot. Personally I love rhubarb and I think small pieces of tender pink rhubarb in there would be delicious, and all a little gentle sharpness to balance the sweetness. However, I only had bigger stalks, so I used them for their juice rather than having big bits bobbing about. Blackcurrants (solbær) and blueberries (blåbær) will also work, but they will also have an effect on the colour, but then again, the flavour will still be delicious, so that is something you could easily live with. Another choice would be cherries (kirsebær), but I didn’t have any to hand. You could even go a bit crazy and omit anything red, going instead for a combination of whitecurrants and gooseberries, but then your dessert would not be red, and you miss your chance to ask people to pronounce the name!

Once I had made my spectacularly-coloured pudding, I mused on whether I should add another flavour. Cardamom is a classic Nordic flavour, but I was not really sure it was what I wanted with fresh summer berries. What about spices like cinnamon? Well, not really. Again, I think ripe fruit stands on its own here, but if you were making this with plums or brambles later in the year, then a little dash of cinnamon or clove would be really lovely. But in summer time – it just has to be pure, lovely fruit!

Once you’ve made rødgrød med fløde you need to give some serious thought to how to present it. First off, leave it to cool, or if you prefer, chill it in the fridge. Now, go off and find some suitable serving dishes. A lot of people seem to like ice cream cups, but I think the most spectacular way to present it is by adding a few generous spoonfuls to a wide dish, then adding a tablespoon of cream in a dramatic swirl. This will leave a fantastic and fairly stable colour contrast that will impress guests and provide a neat little nod to the red-and-white of the Danish flag. And when it comes to cream, go for the real deal. Not some low-fat version or a cream substitute. You want rich, golden, full-fat double cream!

In terms of taste, this dessert is wonderful. Rich and fruity, but also a little but sharp from the rhubarb, all balanced with cool, luxurious double cream. This really is a perfect dessert for the final days of summer.

And just the day after I made this, the weather changed. Autumn has arrived.

To make Rødgrød med Fløde (serves 6):

Note the specific quantities of each fruit don’t really matter, just as long as you use equivalent weights of whatever you have to hand.

Part 1 – the juice

• 300g rhubarb, chopped
• 150g redcurrants
• 50g blueberries
• 200g strawberries, quartered
• 100g raspberries
• 150g sugar
• 300ml water

Part 2 – for the rødgrød med fløde

• 150g redcurrants
• 50g blueberries
• 50g blackcurrants
• 150g strawberries, quartered
• 50g sugar
• 100ml water
• 3 tablespoons cornflour

To serve

• double cream

1. Put the “part 1” berries into a saucepan. Bring to the boil then simmer very gently, covered, for 20 minutes. Break up the fruit with a wooden spoon, then strain through a muslin bag. When cool, give the bag a good squeeze to get as much juice as you can. Discard the seeds and skins.

2. Put the juice in a saucepan. Add the “part 2” fruit, sugar and water. Heat gently then simmer on a low heat, covered, for 10 minutes.

3. Mix the cornflour with a little water, and add to the fruit mixture. Stir well until it is smooth and thickened. If too thin, add a little more cornflour, it too thick, add a little water. Check the flavour – add more sugar if needed, or add a few drops of lemon juice if too sweet.

4. Pour the mixture into a bowl, cover with cling film and leave to cool.

5. Serve in individual bowls topped with double cream.

Worth making? This is a wonderful, fresh-tasting and luxurious dessert, with the benefit that it can be easily prepared in advance. Highly recommended!

Oh, mon amour! Macarons à la framboise

You remember I said that I wanted to something a little bit different for Valentine’s Day? Well, I did it with the beetroot risotto, so now let’s balance that by going all traditional. I whipped up a batch of very fruity raspberry macarons, which as you can see were very pink and rather romantic.

Previously, when making macarons, I have tended to make nutty, spiced or chocolate variants, usually filled with ganache. Why? My issue has been around the filling – I find meringue-based buttercream a bit of a faff, and I am not a massive fan of the result in all cases. The alternative – using jam as the filling – didn’t strike me as too satisfying either. So I played around, and came up with a winning combination. A simple buttercream, with fresh raspberry puree folded in. The result is creamy, sweet and fruity all in one go, and they have the freshness that jam just does not bring. I realise that purists will shudder at the butter-plus-icing sugar filling (too grainy! not smooth! too easy!) but it worked here and tasted good, so that’s a success for me!

This was also a chance for me to try out some all-natural food colouring that I bought in [Mmmmh!] in Brussels last year. This one is a deep pinkish-red, and is a beetroot extract – and looks like dried beet juice, ground to a very fine powder. I like the natural food colouring. The shades are a little more muted, but actually quite pretty, and it does make you ask what actually goes into something that is blood red, royal blue or shocking purple?

While this powder was perfect for adding a delicate pink hue, I am afraid that I did over-reach myself. Inspired by raspberry and peppercorn macarons from Cannelle & Vanille, I used some of my beetroot powder as she used raspberry powder. I imagine that powdered raspberry is fruity and sharp, welcome on the tongue as a foil to the sweetness of the macaron shell and the smoothness of the filling. As I could not have guessed, mine had a vague taste of root vegetable to them. The ten macaron shells I tried this on went straight into the bin, poor things.

But look closer…you can see I have hidden something from you. In the spirit of surprises for St Valentine, I included a chunk of fresh raspberry in the middle of each macaron, for a sort of “maximum fruit” experience. And it worked well! So it would seem that I have overcome my mini-phobia of macarons with real fruit flavours. Bravo!

For raspberry macarons (makes around 25-30):

• 150g ground almonds
• 150g icing sugar
• 110g egg whites (4 egg whites – but weigh them to be sure)
• red food colouring (I used a natural beetroot-based colour)
• 165g white sugar (granulated or caster)
• 35ml water

Combine the icing sugar and ground almond, and sieve well. Set aside.

Put 55g of egg whites in a bowl. Add the food colouring (if using) and whisk very lightly – they will become a little frothy, but should remain liquid.  Set aside.

In a separate bowl, whisk the other 55g of egg whites until it reaches the firm peak stage.

Put the white sugar and water in a saucepan. Heat gently until it reaches the “soft ball” stage (118°C, or when you drop a little of the sugar into cold water, it forms a soft ball). I find this happens once all the sugar dissolves and the mixture boils. Once ready, pour in a thin stream into the whipped egg whites, beating continuously. This is best done using a Kitchen Aid or beater. Allow to cool to just above room temperature.

Pour the coloured liquid egg whites onto the almond mixture.

Add one-third of the meringue mixture to the almond mixture and combine. Add another third, combine, then add the remainder of the meringue. With a light hand, mix well until you have a smooth, glossy batter. It should flow slowly (think lava, not a mudslide).

Pipe the batter onto a sheet of greaseproof paper on a baking sheet, so that you have a sheet with lots of little rounds, around 3-4cm across. Leave to sit in the open for 20-30 minutes, then bake at 150°C for 15 minutes. Half-way through cooking, turn the baking sheet around.

Once cooked, remove from the oven and allow to cool on the baking sheet. Assemble the macarons with the filling of your choice.

For the raspberry buttercream:

• 50g unsalted butter, at room temperature
• 150g icing sugar
• 1 tablespoon cream
• 2-3 drops vanilla extract
• 50g raspberries, crushed

Combine the butter, icing sugar, cream and vanilla in a bowl. Begin with a spoon, then start to whisk with a beater until light and fluffy. Fold in the raspberries. If the mixture splits or seems too wet, add more icing sugar until you have a smooth, soft mass. Use in a piping bag to fill the macarons – pipe on one side, place 1/2 raspberry on top, then add a dot of filling to the top macaron shell, and press together very lightly.

Worth trying? These macarons are super-pretty and very romantic, so perfect if you are looking to impress on Valentine’s Day. The trick with the fresh fruit in the filling is, in my view, the best way to provide a flavourful raspberry macaron. And they provide just a little glimmer of the summer that is hopefully not too far away now.
